Oven Baked Pork and Paprika Casserole

Oven baked pork and paprika casserole. Pork with vegetables and spices baked in the oven. Delicious!
Makes 4-6 servings

Ingredients:

  • 1 1/2 pounds (1.44 kg) lean pork,cubed
  • 1 cup (250 g) thinly sliced onion
  • 1 cup 9250 g) sliced mushrooms
  • 1/4 cup (60 g) finely chopped green sweet pepper
  • 2-3 tablespoons paprika
  • 2 beef bouillon cubes
  • 1 cup (250 ml) hot water
  • cornstarch
  • chopped fresh parsley

Cooking Method:

  1. In a deep ovenproof dish,combine cubed pork,onion,mushrooms and green sweet pepper. Mix well.
  2. Stir in paprika.
  3. In a small bowl,dissolve beef bouillon in water.Stir in the pork mixture.
  4. Preheat oven to 350 F (175 C).
  5. Cover tightly ovenproof dish and cook in preheated oven for 1 1/2 hours. (Do not overcook!)
  6. Thicken the casserole with cornstarch paste.
  7. Sprinkle with chopped fresh parsley.
  8. Serve pork and paprika casserole with cooked rice or baked potatoes.
