1 cup (250 ml) dry white wine
8-12 large lettuce leaves
4 halibut fillets
1 teaspoon bouquet garni
1/2 cup thinly sliced spinach
salt and freshly ground black pepper

Cooking Method:
- Pour dry white wine into slow cooker.
- Cover and cook on high-heat setting for 20 minutes.
- Cut large center vein from lettuce leaves,leaving leaves intact.Immerse in boiling water just until leaves are wilted (about 30 seconds). Drain well.
- Sprinkle halibut fillets with herbs.Season lightly with salt and black pepper.Sprinkle with sliced spinach.
- Wrap fish in lettuce leaves,then seam sides down in slow cooker.
- Cover slow cooker and cook on high-heat setting for 1 hour or until fish is tender and flakes with fork.
