Ingredients:
4 large dried mushrooms,soaked and sliced
1/4 cup (60 ml) cooking oil
3 medium yellow onions,peeled and thinly sliced
3 celery stalks,thinly sliced
3 cups spinach leaves
1 bunch scallions,cut into 2-inch lengths
1/2 cup (125 ml) canned bamboo shoots,sliced
1 pound (480 g) tender beef,thinly sliced
3/4 cup (180 ml) beef stock
1/2 cup (125 ml) soy sauce
1 tablespoon granulated sugar
1/2 pound (240 g) pad soft bean curd,cubed
1/3 cup noodles

Cooking Method:
- In a heavy-iron pan,heat cooking oil over medium-high heat.
- Add onions,celery,spinach,scallions,mushrooms and bamboo shoots.
- Place meat over vegetables.Add remaining ingredients.
- Simmer uncovered over medium-low heat until beef is tender and vegetables are cooked but still crisp.Stir 2-3 times during the cooking.
- Serve with boiled rice.
