Dry Szechuan chicken. Fried chicken with delicious Szechuan sauce. Serve it with hot noodles or cooked rice.

- 1 pound (480 g) boneless chicken pieces
- 1 teaspoon ginger-garlic paste
- 1 teaspoon green chili sauce
- 1 teaspoon soy sauce
- 1 teaspoon vinegar
- 2 tablespoons corn flour
- 2 tablespoons maida flour
- salt
- cooking oil
- For the Schezwan sauce:
- 4-5 cloves garlic,peeled and chopped
- 1 piece ginger,chopped
- 1 medium yellow onion,peeled and chopped
- 1 teaspoon soy sauce
- 1 teaspoon chili sauce
- 1 teaspoon vinegar
- 1 teaspoon tomato sauce
- 2 teaspoons vegetable oil
- salt
- 3 green chilies
Cooking Method:
- In a large bowl,combine all ingredients,except chicken pieces.Mix well.
- Add chicken ,toss well to coat meat completely.
- Cover and refrigerate for at least 2 hours.
- Preheat cooking oil in a wok.Add marinated chicken pieces and fry until golden brown.
- Place fried chicken in prepared Szechuan sauce.Stir well.Sprinkle with chopped green onions.
- For Szechuan sauce: In a frying pan, heat vegetable oil.
- Add ginger and garlic and saute,stirring,for 1 minute.
- Stir in onion and green chilies and saute for a further 1 minute.
- Stir in remaining sauce ingredients.Saute for a further 1 minute.
- Once the right consistency is reached toss the chicken lollipops in the sauce.
