Oven baked Thai chicken breasts. This chicken recipe is so simple and extremely yummy.Chicken breasts marinated in spicy marinade and cook in halogen (turbo) oven.

Ingredients:
2-3 cloves garlic,peeled
1 red onion,peeled
1 red chili,seeded
ginger
1 lemongrass stalk peeled
fresh coriander
freshly squeezed juice of 1 lime
1 tablespoon olive oil
4-6 skinless and boneless chicken breasts

Cooking Method:
- In a food processor,combine all ingredients,except chicken,lime juice and olive oil.
- Process well.
- Place spicy mixture in a bowl.Stir in olive oil and lime juice.
- Add chicken breasts,cover and marinate for at least 3 hours.
- Remove marinated chicken breasts from marinade and place into oiled roasting pan.
- Preheat halogen (turbo) oven to 400F (200 C).
- Place roast pan on high rack of preheated oven.
- Bake for 20 minutes or until chicken breasts are fork-tender.
