Shrimp-stuffed sole with delicious homemade sauce.

Ingredients:
For Stuffing:
- 2 tablespoons chopped onion
- 2 tablespoons unsalted butter
- 1 cup (250 g) soft bread crumbs
- 1/2 teaspoon salt
- freshly ground black pepper
- dash nutmeg
- 1/2 cup (125 g) peeled and chopped shrimp
- 2 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 1 cup (250 ml) milk
- 2 tablespoons unsalted butter
- 1 cup (250 g) soft bread crumbs
- 1/4 teaspoon salt
- 1/4 cup (60 g) grated Parmesan cheese
- lemon and fresh parsley for garnish
Cooking Method:
- Wipe the fillets of fish with a damp cloth and lay them skin side up on a plate.
- To make the stuffing: heat butter in a large nonstick skillet.
- Add chopped onions and fry until tender and transparent (don't brown).
- Add remaining stuffing ingredients,mix well.
- Place half of mixture on the center of each fish fillet.
- Fold the top and bottom of the fillet over and place fillets,ends underneath,in a greased ovenproof dish.
- To make the sauce:In a sauce pan,melt the butter.
- Add all-purpose flour,then stir in milk,half cup at a time.
- Bring to a boil,stirring well.
- Pour sauce evenly over stuffed fillets.
- To make a topping:In a mall skillet,melt the butter.Remove from the heat and add remaining ingredients.
- Sprinkle evenly over fillets.
- Preheat oven to 350 F (175 C).
- Bake uncovered for 40-45 minutes,or until topping is golden brown and fillets cooked through.
- Garnish shrimp-stuffed sole fillet with fresh lemon and parsley.
