Chicken Breasts with Ginger
Fresh ginger and coriander turn everyday chicken breasts into a dish fit for company.Serve with basmati rice and herbed carrots.
Chicken Breasts with Ginger
Ingredients:
- 1 lb boneless and skinless chicken breasts
- 1 tablespoon vegetable oil
- 2 cloves garlic,minced
- 1 sweet green or red pepper,cut in thin strips
- 1 cup thinly sliced mushrooms
- 2 tablespoons each minced gingerroot and soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon granulated sugar
- 1/2 cornstarch
- 1/4 cayenne pepper
- 1/4 cup fresh coriander(cilantro) leaves

Cooking method
Cut chicken breasts into 2-inches thin strips.
In large nonstick skillet or wok,heat oil over high heat;stir-fry chicken and garlic for 2 minutes.Add sweet pepper and mushrooms,stir-fry for 1 minute.
Stir together ginger,soy sauce,oyster sauce,1 tablespoon water,sugar,cornstarch and cayenne pepper;add to skillet and stir-fry for 1 minute or until chicken breasts are no longer pink inside and sauce is thickened.Sprinkle with coriander.
