- 3 tablespoons olive oil
- 2 pounds (960 g) stewing beef ,cubed
- salt and freshly ground black pepper
- 2 medium-sized yellow onions, peeled halved and thinly sliced
- 2 cloves garlic,peeled finely chopped
- 3 medium-sized potatoes,peeled quartered
- 2 medium-sized tomatoes, coarsely chopped
- 1 tablespoon tomato paste
- 1 tablespoon Hungarian sweet paprika
- 1 teaspoon caraway seeds
- 1/4 teaspoon ground cloves
- 1 bay leaf
- 1 cup (250 ml) beef stock
- 1 tablespoon plain flour crusty bread, to serve
- sour cream, to serve
Cooking Method:
- Heat 2 tablespoons olive oil in a pressure cooker
over medium-high heat.
- Season cubed beef with salt and pepper.
- Working in a batches,add to pressure cooker and cook until browned.
- Transfer cooked beef to a plate.
- Add remaining 1 tablespoon olive oil to the pot.
- Add onion and garlic,then reduce heat to medium-low and saute until golden brown.
- Return cooked beef to pressure cooker.
- Stir in potato, tomato, tomato paste, paprika, caraway seeds, cloves and bay leaf.Mix well.
- Pour in beef stock.
- Close pressure cooker and lock the lid.
- Set burner heat to high pressure.When pressure cooker reaches high pressure,reduce heat to low.
- Set a timer to cook for 20 minutes.
- Remove the pot from the heat.
- Carefully open the lid.
- In a mixing bowl,combine the flour with 1 tablespoon of the cooking liquid, stirring to make a smooth paste.
- Stir the paste into beef goulash and simmer, uncovered, over medium heat
for a further 5 minutes, or until the sauce has
thickened.
- Discard bay leaf.
- Season beef goulash with salt and black pepper.
- Serve with crusty bread.Top with a dollop of sour cream.
