Fried coconut shrimp recipe. Very delicious appetizer fried in a skillet and served served with chili sauce.
Makes 4 servings
Ingredients:
1/3 cup all-purpose flour
2 large eggs,beaten
3/4 cup Panko breadcrumbs
1 cup sweetened shredded coconut
1 pound (480 g) raw large shrimp,peeled and deveined,tails intact
coconut oil for frying
1/2 teaspoon salt and 1/2 teaspoon freshly ground black pepper

Ingredients:

Cooking Method:
- In a small mixing bowl,combine all-purpose flour,salt and black pepper.Mix well and set aside.
- Pour beaten eggs in another bowl.
- In a third bowl,combine Panko breadcrumbs and shredded coconut.Mix well.
- Dip the shrimp into flour mixture, then in beaten egg, and then dredge the shrimp into the coconut mixture.
- Preheat coconut oil in a large nonstick skillet (add enough oil to cover the bottom of skillet).
- Working in a batches,fry shrimp on both sides for about 3 minutes per sides or until golden brown.
- transfer fried coconut shrimp to paper towel lined serving plate.
- Serve with chili sauce.
