Navajo Beef and Chile Stew in Slow Cooker
If you don't care for spicy food,reduce the amount of ground red pepper to 1/8 teaspoon.Makes 4 servings for this beef stew recipe.Ingredients:
1 pound lean beef stew meat,cubed
1 onion,chopped
2 cloves garlic,minced
1 can ready-cut tomatoes with juice
1 can(7-oz.) diced green chiles,drained
1 can (8½-oz.) whole-kernel corn,undrained
1,5 teaspoon dried oregano leaves,crushed
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground red pepper
2 tablespoons yellow cornmeal
Navajo Beef and Chile Stew in Slow Cooker (Cooking Method)
Combine all ingredients together in slow cooker,except cornmeal.Mix well.Cover and cook on Low 7 to 8 hours or until beef is tender.Turn control on High,stirring in cornmeal.Cover and cook beef stew on High 20-25 minutes.
