Ingredients:
1 teaspoon ground allspice
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cloves
3 pounds (1.44 kg) beef rump roast
2 tablespoons extra-virgin olive oil
1 cup (250 ml) dark rum,divided
1.2 cup (250 ml) beef broth
2 cloves garlic,peeled and minced
2 bay leaves
1/2 cup dark brown sugar
1/4 cup (60 ml) freshly squeezed lime juice

Cooking Method:

1. In a shaker filled with crushed ice,combine all ingredients.
2. Shake well.
3. Strain mixture into cocktail glass.

1. In a large bowl,combine dried fruits and candied peel.
2. Add 3 tablespoons rum and ale.Mix well and leave to macerate overnight.

4. In a mixing bowl,combine prunes,eggs,almonds,apple,mixed spice,salt,brown sugar and juice and grated rind of oranges and lemons. Mix well.

6. Knead to dough and mix in all remaining ingredients.
7. Tip mixture onto a clean,floured tea-towel and tie the corners together.
8. Using a wooden spoon,suspend in a large saucepan half filled with boiling water.Boil for 5 hours.
9. Drain plum pudding for 5 minutes before removing tea-towel.
10. Warm remaining rum and pour over plum pudding.

Ingredients: 

• 1 cup (250 ml) pineapple juice
• 1/2 cup (125 ml) white rum
• 1/4 teaspoon Imitation Coconut Extract
• 3 drops Red Food Color
•  (750 ml) sparkling white wine
•  2 drops Yellow Food Color

Cooking method: 

1.  Place 2 tablespoons of granulated sugar in small resealable plastic bag.
2. Stir in 5 drops Red Food Color and 5 drops Yellow Food Coloring. 
3.  Seal tightly bag.
4.  Knead sugar until the color is evenly distributed.
5.  Pour mixture out onto shallow plate.
6.  Dip rim of old-fashioned glass in water, then into Orange-tinted sugar to lightly coat.
7. In a mixing bowl,combine pineapple juice, rum, coconut extract and food color.Mix well.
8. Pour 2 oz (60 ml) of pineapple mixture into old-fashioned glass and top with 4 oz (120 ml) of white sparkling wine.

Cooking Method:

1. Place 2 cups of strawberries in a blender.Puree and put in separate bowl.
2. Rinse well blender.
3. In a blender,combine 2 cups (500 g) cubed ice,4 cups diced pineapple and coconut milk.Blend until smooth.
4. Add rum.
5. Pour reserved strawberry puree into cocktail glass and stir around bottom sides of glass.
6.  Fill glass ⅓ of the way with Ppiña Colada.
7.  Add 2 more spoons of strawberry, stirring it lightly.
8. Fill cocktail glass the rest of the way with Piña Colada.
9. Add a small amount of strawberry to the middle.
10. Garnish and serve.
11. Serves 4 adults.
