Slow cooker spiced chicken with brown rice. Chicken pieces with spices cooked in slow cooker and served on bed of fresh spinach leaves with cooked brown rice.Homemade yogurt-orange sauce laced intriguing blend of spices is spooned over chicken and brown rice,giving this yummy dish the flavors of India.
Makes 4-5 servings
Ingredients:
6 boneless and skinless chicken thighs
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon paprika
1 small yellow onion,peeled and chopped
1 large clove garlic.peeled and finely minced
1 teaspoon granulated sugar
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/8 teaspoon ground cardamom
1 1/2 teaspoons grated orange peel
1/3 cup (80 ml) freshly squeezed orange juice
1 tablespoon cornstarch
1/2 cup (125 ml) plain nonfat yogurt
2 cups cooked brown rice
fresh spinach leaves

Cooking Method:
- Rinse chicken thighs and pat dry with paper towels.
- Place chicken pieces in slow cooker.Sprinkle with salt,black pepper and paprika.
- In a mixing bowl,combine onion,garlic,sugar,coriander,cumin,cardamom,orange peel and orange juice.Mix well.
- Spoon mixture evenly over chicken.
- Cover slow cooker and cook on low-heat setting for 4 hours or until chicken is tender.
- Remove cooked chicken from slow cooker and transfer to a serving platter.Cover with aluminum foil and keep warm.
- Pour cooking liquid into a small saucepan.
- In a small mixing bowl,combine cornstarch and yogurt.Mix well.
- Stir yogurt mixture into pan juices.
- Cook,uncovered,over medium heat,stirring,until mixture thickens slightly.
- Place cooked chicken on the bed of fresh spinach leaves.
- Spoon sauce over cooked chicken.
- Serve with cooked brown rice.
