Oven baked choca-mocha saucy pudding. Yummy pudding baked in halogen (turbo) oven. You could make this delicious dessert in small dishes,but adjust the cooking time if you do.
Makes 4-6 servings
Ingredients:
4 oz (120 g) granulated sugar
4 oz (120 g) unsalted butter
2 large eggs,beaten
2 tablespoons milk
1 tablespoon vanilla essence
3 oz (90 g) self-raising flour
2 tablespoons cocoa
1 1/4 cups (300 ml) boiling water
2 tablespoons sugar
1 tablespoon instant coffee
creme fraiche to serve

Cooking Method:
- In a mixer,combine 4 oz (120 g) sugar and butter.
- Beat until creamy and fluffy.
- Add eggs,milk and vanilla.Mix well.
- Add flour and cocoa.Mix again.
- Pour vanilla mixture into greased ovenproof dish and smooth over until flat.
- In a small bowl,combine boiling water,remaining sugar and coffee.Stir thoroughly until dissolved and lump free.
- Pour coffee mixture over the sponge mixture.
- Preheat halogen oven to 350 F (175 C).
- Place on low rack of turbo oven.
- Bake in preheated oven for 35-40 minutes or until sponge is firm to touch.
- Serve with a dollop of creme fraiche.
