Ingredients:
- 2 pounds (960 g) veal shoulder,cubed
- 1 tablespoon paprika
- 1/4 cup (60 g) cornstarch
- 1/4 cup (60 ml) vegetable oil
- 2 large yellow onions,peeled and chopped
- 1 teaspoon granulated sugar
- 2 large tomatoes,skinned and chopped
- 1/2 teaspoon chili powder
- 1/2 teaspoon caraway seeds
- bouquet garni
- 1 red bell pepper,seeded and chopped
- 2 teaspoons salt
- freshly cracked black pepper
- monosodium glutamate
Cooking Method:
- In a small mixing bowl,combine paprika,salt,black pepper and cornstarch.Mix well.
- Add cubed veal and shake well until coated.
- In a large saucepan,heat oil over medium-high heat.
- Working in the batches,add seasoned meat and saute until browned.
- Remove cooked veal form the heat and set aside.
- Add onions,sprinkle with sugar and fry gently until golden brown.
- Add tomatoes,chili powder and caraway seeds.Stir in cooked veal and add bouquet garni.
- Cover,reduce heat to low and simmer gently until cooked (for about 2 hours).
- Add chopped red bell pepper and monosodium glutamate during the last 30 minutes.
- Discard bouquet garni.

- 5 pork loin chops
- 2 tablespoons vinegar
- 1/4 cup (60 g) tomato ketchup
- 1/4 cup (60 g) thick fruit sauce
- 2 teaspoons soy sauce
- 1/4 cup (60 ml) vegetable oil
- 1 large yellow onion,peeled and chopped
- 2 tablespoons brown sugar
- 2 tablespoons cornstarch
- 3/4 cup (180 ml) water
Cooking Method:
- Place pork chops in a shallow dish.
- In a mixing bowl,combine vinegar,ketchup,fruit and soy sauce.Mix well and spoon mixture over pork chops.
- Cover and refrigerate for 2-3 hours.
- Remove marinated pork chops from refrigerator.Drain,reserving marinade.
- Heat vegetable oil in a large nonstick skillet.Add onions and brown sugar and fry,stirring until browned.
- Stir in cornstarch,then add water,marinated pork chops and reserved liquid.
- Cover and simmer over low heat until pork chops are tender (for about 45 minutes),turning and busting occasionally.

- 1 bay leaf
- 3 cloves

- 2/3 cup (160 g) sour cream
- salt and freshly ground black pepper
- 2 1/2 cups (625 ml) water
Cooking Method:
- Place chicken pieces into saucepan with vinegar and water.
- Add remaining ingredients,except sour cram.
- Cover and simmer gently over low heat until chicken is tender.
- Discard the bay leaf and cloves.
- Stir in sour cream.
- Sinner gently for a further 10 minutes.
- Remove cooked chicken from saucepan.

Ingredients:
- 1 cup (250 ml) olive oil
- 2 cloves garlic,peeled and crushed
- 1 pound (480 g) eggplant,thinly sliced
- 2 pounds (960 g) tomatoes,thinly sliced
- 1 pound (480 g) zucchini,thinly sliced
- 4 green or red bell peppers,seeded and thinly sliced
- 1 2/3 cups (330 ml) dry white wine
- salt and freshly ground black pepper to taste
Cooking Method:
- Heat olive oil in a large nonstick skillet.
- Add crushed garlic and cook,stirring,until lightly browned.
- Add remaining vegetables and cook,stirring,until lightly browned.
- Transfer cooked vegetables to deep,heavy saucepan,reserving olive oil.
- Pour olive oil over vegetables and season with salt and black pepper.
- Pour over dry white wine and simmer over low heat for 1 hour.Do not stir.
- Serve white wine ratatouille with white or red wine.

Homemade Espagnole sauce. Very easy and delicious sauce with mushrooms,bacon and sherry.
Ingredients:
- 1/4 cup (60 g) unsalted butter,melted
- 3 slices bacon,chopped
- 1 carrot,peeled and chopped
- 1 stalk celery,chopped
- 1 yellow onion,peeled and sliced
- 1/2 cup (125 g) all-purpose flour
- 2 1/2 cups (725 ml) beef stock
- 4 mushrooms,washed and sliced
- 1/2 cup (125 g) tomato paste
- 1 bouquet garni
- 1/4 cup (60 ml) sherry
- salt and freshly ground black pepper to taste
Cooking Method:
- In a heavy saucepan,heat melted butter.
- Add chopped bacon,carrot,celery and onion.Cook,stirring,until vegetables are golden brown.
- Stir in all-purpose flour.
- Cook over medium heat until the roux is a deep golden brown (for about 12-15 minutes).
- Stir in beef stock,increase heat to high and ,stirring,bring to a boil.
- Add the mushrooms,tomato paste,bouquet garni and seasoning.Reduce heat to low and simmer for for 1 hour,stirring frequently.
- Strain through the fine strainer.
- Add the sherry,then taste and adjust the flavor if necessary.

- 5 cups (1.25 L) homemade chicken stock
- 1 boneless and skinless chicken breast,cut into 1-inch (2.5 cm) pieces
- 1/4 cup (60 g) unsalted butter,melted
- 1/2 cup (125 g) all-purpose flour
- 2 1/2 cups (625 g) scalded milk
- 1 small stalk fresh celery,finely chopped
- few drops Tabasco sauce
- 2 egg yolks
- salt and freshly ground black pepper
Cooking Method:
- Heat melted butter in a large heavy pan.
- Stir in all-purpose flour and cook for a about 1 minute.
- Add half of chicken stock.Cook,stirring,over medium heat until boiling.
- Add remaining stock,scalded milk,chicken pieces,celery,Tabasco sauce and seasoning.
- Bring to a boil.
- Reduce heat to low and simmer,covered,for 5 minutes.
- In a small mixing bowl,beat the egg yolks with a fork and pour into heated tureen.
- Pour chicken soup slowly over beaten egg yolks,stirring all the time with wooden spoon.

- 1 tablespoon dry sherry
- 8 water chestnuts,quartered and diced
- 4 cups (1L) chicken stock
- 4 oz (120 g) bean sprouts
- 1 large egg,beaten
- salt and freshly ground black pepper to taste
Cooking Method:
- In a saucepan,heat vegetable oil over medium-high heat.
- Add vegetables and fry,stirring,for 5 minutes.
- Sprinkle chicken meat with sauce and dry sherry.
- Add chicken stock to pan with water chestnuts.bring to a boil.
- Add chicken meat with soaking juices.Reduce heat to low and simmer for 10 minutes.
- Stir in bean sprouts and cook for a further 2 minutes.Taste and season with salt and black pepper.
- Remove pan from the heat and stir in beaten egg,stirring constantly.

Celery soup recipe. Very easy and delicious celery soup with whiskey and Stilton.
Ingredients:
- 1 tablespoon unsalted butter
- 1 large yellow onion,peeled and chopped
- 1 pound (480 g) celery,trimmed and diced
- 1/2 cup (125 ml) whiskey
- 1/2 cup (125 ml) dry white wine
- 3 cups (750 ml) vegetable bouillon
- 5 oz (150 g) cream
- 1 teaspoon curry powder
- dash of cayenne pepper
- freshly squeezed lemon juice
- salt and freshly ground black pepper
- 3 1/3 oz (100 g) Stilton cheese
- 8 slices of roasted baguette
Cooking Method:
- Melt butter in a large nonstick skillet.
- Add onion and celery and brown for a few minutes.
- Add whiskey and dry white wine and continue to cook over medium-high heat until reduced by half.
- Reduce heat to low and simmer for about 25 minutes.
- Stir in the cream
- Puree the soup.Add lemon juice and season with curry powder,paprika salt and black pepper.
- Pour the soup into four flat heat-resistant soup dishes
- Spread the Stilton cheese firmly on the slices of roasted baguette and place cheese-side up on top of the soup.
- Preheat your oven to 440 F (220 C).

- 4 pounds (about 2 kg) fresh beef brisket,trimmed
- 2 medium yellow onions,peeled,sliced and separated into rings
- 1 bay leaf
- 12 oz (360 ml) can beer
- 1/4 cup (60 ml) hot chili sauce
- 2 tablespoons brown sugar
- 1 clove garlic,peeled and minced
- 1/2 teaspoon dried thyme,crushed
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Cooking Method:
- In a slow cooker,combine beef brisket, onions and bay leaf.
- In a mixing bowl,combine remaining ingredients,except cornstarch and water.
- Mix well and pour mixture over meat in slow cooker.
- Cover slow cooker and cook on low-heat setting for 10-12 hours.
- Remove cooked beef and onions from slow cooker,using a slotted spoon.Transfer to a serving platter,reserving cooking liquid.
- Discard bay leaf.
- Cover neat and onions with aluminum foil and keep warm.
- Skim fat from reserving cooking liquid.Measure 2 1/2 cups (370 ml) of the liquid and discard remaining cooking liquid.
- In a medium sauce pan,combine cornstarch and water.Mix well.
- Stir in 2 1/2 cups (370 ml) of cooking liquid.Cook,stirring,over medium heat until thickened and bubbly.

- 1 pound (480 g) stewing beef steak,cubed
- 1 2/3 oz (50 g) plain flour
- 3 teaspoons paprika
- olive oil
- 2 leeks,sliced
- 1 yellow onion,peeled and sliced
- 2 tablespoons redcurrant jelly
- 1 cup (250 ml) dry red wine
- 1 1/4 cups (310 ml) beef stock
- 1/2 cup (125 g) button mushrooms
Cobbler:
- 3 1/3 oz (100 g) self-raising flour
- 1/3 cup (80 g) natural yogurt
- 2 tablespoons olive oil
- chopped fresh parsley
Cooking Method:
- Place beef stewing steak in a bowl and coat well with paprika and plain flour.
- Heat olive oil in ovenproof casserole dish over medium heat.
- Add onion and leeks and cook,stirring,for 5 minutes.
- Add seasoned cubed beef and cook for a further 5 minutes,stirring well.
- Stir in redcurrant jelly.
- Gradually add dry red wine,beef stock and mushrooms.
- Reduce heat to low,cover and cook for 20 minutes.
- Meanwhile,in a mixing bowl,combine flour,yogurt,olive oil and parsley.Mix well to form a soft dough.
- Place on a floured board and shape into bowls.
- Remove beef casserole from the heat,leaving it in the ovenproof casserole dish.Place the scones on the top of the casserole.
- Place on low rack of halogen oven and set temperature to 360 F (180C).
- Bake in preheated oven for 20-30 minutes.

Ingredients:
- 2 pounds (960 g) king prawns,deveined

- 1/2 cup (125 ml) water
- handful of fresh coriander,chopped
- 1 lemon,cut into wedges
Cooking Method:
- Place king prawns in ovenproof dish.
- In a mixing bowl,combine curry sauce and water.Mix well and pour over prawns.
- Refrigerate for 1 hour.
- Remove marinated prawns from refrigerator.
- Place a baking tray on the grilling rack of turbo oven.
- Carefully place marinated prawns on the tray.
- Turn the heat to high and grill,turning,until they go pink (for about 8 minutes).
- Meanwhile,in a saucepan,heat the leftover sauce.Add chopped coriander.
- Place baked prawns on the swerving plate and pour over remaining sauce.

- 2 cups (500 g) all-purpose flour,divided

- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons malt vinegar
- 1 tablespoon clear honey
- 1/4 cup (60 ml) beer (dark ale)
- 2 tablespoons sweet pickle juice
- 1 1/2 cups (370 ml) unsweetened lemon seltzer water
- 2 russet potatoes,skin on and sliced into wedges

Cooking Method:
- Sift 1/2 cup of all-purpose flour in a medium bowl.
- Roll fish strips in flour,then shake off excess and set aside.
- In a large mixing bowl,combine remaining flour,baking soda,salt,black pepper and vinegar.Stir well.
- Add honey,dark ale and pickle juice.Whisk,pouring lemon seltzer water until the batter is the consistency of a light pancake batter. Set aside.
- Pat dry potato wedges with paper towel.
- Preheat your oven to 250 F (125 C).
- In a cast iron skillet fill 3/4 full with canola oil.Heat the oil to 325 F (160 C).
- Working in a batches,cook the fries just until cooked (do not brown!).
- Bring the oil to 350 F (175 C).
- Dip floured fish strips into batter and,using a tongs,drip slightly, then lay the battered cod into the hot oil gently
- Working in a batches,cook fish for five minutes,turning once.
- Once the last piece of fish is cooked and the temperature of the oil is back up to 350 degree, drop in half the fries and cook until crisp.

- 2 large eggs,beaten
- 1/2 cup 9125 g) plain nonfat Greek yogurt
- 1 cup (250 g) apple sauce
- 1/2 teaspoon vanilla extract
- For the Glaze:1 cup (250 g) powdered (caster) sugar
- 1/4 cup (60 g) apple sauce
Cooking Method:
- Preheat your oven to 350 F (175 C).
- Grease nonstick loaf pan with cooking spray.
- In a large mixing bowl,combine all-purpose flour,oak,salt,cinnamon and baking powder.Mix well,using your hands and set aside.
- In another bowl,combine sugar,vegetable oil,beaten eggs,yogurt,apple sauce and vanilla.Mix well and,using your hands,stir into dry mixture.

- 1/2 cup crumbled feta cheese
