Fried Prawn Chow Mein

Fried prawn Chow Mein is delicious Chinese meal.Very easy and fast recipe.

Ingredients:
- 1/2 pound (240 g) egg noodles
- 7 tablespoons peanut oil fro deep frying
- 1 pound (480 g) green prawns,peeled,deveined,tails on
- 1 tablespoon Chines wine or dry sherry
- 1/2 teaspoon salt
- 1 teaspoon cornstarch
- 1 stalk fresh celery,sliced
- 3/4 cup (180 g) dried mushrooms,soaked in warm water for 20 minutes,stems removed and sliced
- 1 yellow onion,peeled and sliced
- 1 cup (250 g) snow peas
- For Seasonings:2 teaspoons dry sherry
- 1/2 teaspoon salt
- 1/2 teaspoon granulated sugar
- 1 teaspoon soy sauce
Cooking Method:
- Cook noodles in salted boiling water.When they begin soften separate with a fork.Do not crowd.
- When noodles tender,drain well and rinse under cold running water.
- Transfer cooked noodles to tray,covered with paper towel.Sprinkle with 2 tablespoons peanut oil to prevent sticking.
- Working in a batches,deep fry noodles,turning once to crisp and brown both sides.
- Drain and set aside.
- Sprinkle prawns with wine,salt and cornstarch.Set aside for 5 minutes.
- In saute pan,heat 2 tablespoons oil.Add celery,mushrooms and onions and saute,stirring for 2 minutes.Remove from saute pan and set aside.
- Add remaining 3 tablespoons peanut oil and saute prawns until the color changes.
- Return cooked vegetables and mix well.Add seasonings,mixed together.
- Serve fried prawn Chow Mein on the crisp noodles.
