Slow-simmered curried chicken. Cubed chicken breasts with spices cooked in slow cooker.Very simple and delicious chicken recipe.
Makes 4 servings
Ingredients:
1 1/2 cups chopped yellow onions
1 pound (480 g) boneless and skinless chicken breasts,cubed
1 cup (250 ml) medium salsa
2 teaspoons grated ginger
1/2 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1/4 cup chopped fresh cilantro
1 teaspoon granulated sugar
1 teaspoon curry powder
3/4 teaspoon salt
hot cooked rice

Ingredients:

Cooking Method:
- Place chopped onions in slow cooker. Top with cubed chicken.
- In a mixing bowl,combine salsa,ginger,garlic powder and red pepper flakes.Mix well.
- Spoon spicy mixture over chicken.
- Cover slow cooker and cook on low-heat setting for 5-6 hours or until chicken is tender.
- In another mixing bowl,combine cilantro,sugar,curry powder and salt.Mix well.
- Add curry mixture to slow cooker and stir in.
- Cover slow cooker and cook on high-heat setting for a further 15 minutes.
- Serve over hot cooked rice.
