Ingredients:

• 3 egg yolks
• 1/2 teaspoon kosher salt
• 1/2 teaspoon freshly ground black pepper
• 1 tablespoon cream
• 1 cup (250 ml) unsalted melted butter
• 1 tablespoon freshly squeezed lemon juice

• 2 pounds (960 g) red potatoes,cut into wedges
• 1/4 cup (60 g) finely chopped yellow onion
• 1 1/2 teaspoons dried oregano

• 2 tablespoons unsalted butter,cut into pieces
• 1 oz 930 g) grated Parmesan cheese

Cooking Method:

1. In a slow cooker,layer potatoes,onion,oregano,butter and seasoning.
2. Cover slow cooker and cook on high-heat setting for 4 hours.
3. Remove baked potatoes from slow cooker and transfer to serving platter.
4. Sprinkle with grated Parmesan cheese and serve.

Pressure Cooker Creamy Roasted Red Pepper Soup

• 1/4 cup (60 g) unsalted butter
• 1 large white onion,peeled and chopped
• 16 oz (480 ml) jar roasted red pepper,drained
• 2 large russet potatoes,peeled and cubed
• 1 jalapeno pepper,seeded
• 1 teaspoon Worcestershire sauce
• 4 cups (1 L) chicken or (for vegetarians)vegetable broth
• 2 cups (500 ml) heavy (double) cream
• salt to taste

Cooking Method:

1. Melt unsalted butter in pressure cooker over medium-high heat.
2. Add chopped onion,reduce heat to low,and cook,stirring,for 2-3 minutes or until it begins soften.
3. Add peppers,cubed potatoes, jalapeno,Worcestershire sauce and broth.
4. Close pressure cooker and set burner heat to high.
5. When pressure cooker reaches high pressure,reduce heat to low and set timer to cook for 6 minutes.
6. Remove pot form the heat and open pressure cooker with quick release method.
7. Puree soup in pressure cooker,using immersion blender.
8. Season to taste with salt.
9. Stir in heavy cream and simmer over low heat for 5-10 minutes.Do not boil.
10. Serve pressure cooker roasted red pepper soup immediately.

Oven baked creamy mushrooms.Very delicious and easy recipe.Grilled in halogen (turbo) oven brioche toasts served with creamy mushrooms.
You can make this in advance and serve with mashed potato or on thick crusty toast as a delicious appetizer,starter or even a main dish.

Oven Baked Creamy Mushrooms

• 3-4 cloves garlic,peeled and finely chopped
• 1/2 cup (125 g) button mushrooms
• 1 dessertspoon unsalted butter,melted
• 3/4 cup (180 ml) creme fraiche
• handful of fresh parsley,chopped
• 4-6 slices brioche bread
• salt and freshly ground black pepper to taste

Cooking Method:

1. Heat melted butter in a saute pan.
2. Add chopped garlic and mushrooms.Cook,stirring,until mushrooms start soften.
3. Stir in creme fraiche.Add chopped parsley and mix well.Season with salt and black pepper.
4. When mushroom sauce is done,try to keep it warm on a low heat.
5. Meanwhile,slice brioche bread.Arrange in a single layer on the grill rack of turbo oven.
6. Set oven temperature to 450 F (225 C).
7. Grill until it starts to brown.
8. Remove grilled brioche toasts from halogen oven.Pour warm mushroom sauce over.
9. Serve immediately.

• 1/4 teaspoon onion powder
• 1/4 teaspoon ground mustard
• 8 oz (240 g) Monterey Jack cheese, shredded
• 4 oz (120 g) Swiss cheese, shredded
• 6 slices bacon,cooked and crumbled
• 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper
• chopped fresh parsley for garnish

Cooking Method:

1. Bring a large pot of water to a boil over high heat.
2. Stir in 1 tablespoon salt and cook pasta,according cooking instruction.Drain water,reserving 1/2 cup (125 ml) of cooking liquid.
3. Measure whole milk into a microwave safe bowl and heat for 2 minutes.
4. Meanwhile,in a saucepan,combine melted butter and all-purpose flour.Cook over high heat,stirring continuously for 2-3 minutes.
5. Stir in hot milk and whisk until smooth.
6. Reduce heat to medium and simmer,stirring occasionally,for 3-4 minutes or until lightly thickened.
7. Stir in salt,black pepper,onion and garlic powder and ground mustard.
8. Stir in shredded cheeses and mix until smooth.

Cooking Method:

1. Heat olive oil in a sate pan.
2. Add sliced mushrooms and bacon and cook,stirring,for 5-8 minutes.Remove from the heat and set aside.
3. melt butter in a heavy saucepan.Add all-purpose flour and,using wooden spoon,stir well.
4. Stir in milk and bring slowly to a boil,stirring.

• 20 small shallots
• 2 1/2-3 pounds (1.14-1.4 kg) boneless and skinless chicken,cut into pieces
• 2 tablespoons unsalted butter
• 2 tablespoons sunflower oil
• 3 tablespoons all-purpose flour
• 1 cup (250 ml) dry white wine
• 2 1/2 cups (625 ml) boiling chicken stock
• 1 bouquet garni
• 1 teaspoon freshly squeezed lemon juice
• 3 cups,button mushrooms,stalks trimmed
• 1/3 cup (80 ml) heavy cream
• 3 tablespoons chopped fresh parsley
• salt and freshly ground black pepper,to taste

Cooking Method:

1. Place shallots in a bowl.Cover with boiling water and leave to soak.
2. Rinse chicken pieces under running cold water and pat dry with paper towel.
3. In a large frying pan,melt 1 tablespoon butter with sunflower oil.
4. Add chicken pieces and cook,turning occasionally,until lightly browned.
5. Using a slotted spoon,transfer cooked chicken pieces to slow cooker,leaving the juice behind.
6. Stir all-purpose flour into the pan juices,then blend in dry white wine.

8. Bring mixture to the boil over high heat,stirring,until thickened.

13. Cover slow cooker and cook on high-heat setting for 3-4 hours,or until chicken is tender.
14. Using the slotted spoon,remove chicken and vegetables from slow cooker and transfer to warmed serving dish.
15. Add heavy cream and 2 tablespoons chopped parsley to creamy sauce and whisk well to combine.Season with salt and black pepper,if necessary.Pour sauce over chicken and vegetables.

• 2/3 cup (160 ml) dry white wine

Cooking Method:

1. In a frying pan,melt butter.Add chopped shallot and celery and fry,stirring,until soft.
2. Transfer cooked vegetables to a bowl and stir in orange rind,prunes,breadcrumbs,parsley and nutmeg.
3. Season with salt and black pepper,set aside and allow to cool.
4. Slice down the length of each pork fillet,cutting 3/4 of the way through.
5. Open out each pork fillet and lay it out on a board.
6. Cover sliced pork with plastic wrap,then gently bash with rolling pin until meat is about 1/4 -inch (5 mm) thick.
7. Arrange 3 slices of prosciutto on a board and top with one pork fillet.Repeat with remaining prosciutto and pork fillet.
8. Divide prune stuffing between pork fillets,then fold over to enclose the filling.
9. Wrap prosciutto around prune-stuffed pork fillet and secure with wooden toothpicks.
10. In a frying pan,heat olive oil.Add stuffed pork fillets and quickly brown all over.
11. Transfer browned prune-stuffed pork fillets to slow cooker.
12. Pour dry white wine into frying pan and bring to a boil.Pour boiled wine over pork fillets in slow cooker.
13. Cover slow cooker and cook on high-heat setting for 1 hour.Switch slow cooker to low and cook for a further 2-3 hours or until pork fillets are tender.

• 1 cup (250 ml) coconut milk
• 1/2 cup (125 ml) boiling chicken stock
• 1 teaspoon tomato puree
• 5 tablespoons light cream
• 2 tablespoons freshly squeezed lemon juice
• 1 teaspoon garam marsala
• salt and freshly ground black pepper to taste

Cooking Method:

1. In a frying pan,fry flaked almonds until pale golden.
2. Transfer 2/3 fried almonds to plate and continue to fry remaining until they are lightly deeper in colour.
3. Transfer the darker almonds to separate plate and set aside.
4. Allow the paler almonds to cool.Grind them until fine in a space grinder.
5. In a frying pan,heat the butter.Add chicken pieces and gently fry until evenly brown.
6. Add a little sunflower oil to the fat in pan,then add chopped onion and fry,stirring,for 8 minutes.

• 1 hot red chili pepper,halved,seeded and finely chopped
• 1 teaspoon ground allspice
• 1.2 teaspoon ground cinnamon
• 1 teaspoon dried thyme
• 1/4 teaspoon freshly grated nutmeg
• 2 teaspoons sugar
• 1 teaspoon all-purpose flour
• 1 1/4 cups (300 ml) chicken stock
• 1 tablespoon white wine vinegar
• 1 tablespoon freshly squeezed lime juice
• 2 teaspoons tomato paste
• salt and freshly ground black pepper to taste

Cooking Method:

1. Pat dry chicken pieces with paper towel.
2. In a frying pan,heat sunflower oil and butter until melted.
3. Add chicken pieces and cook until browned on all sides.
4. Using a slotted spoon,remove cooked chicken from the pan and transfer to slow cooker.
5. Add chopped green onions,garlic and chili in frying pan and cook,stirring,for 4-5 minutes or until softened.

Cooking Method:

1. In a slow cooker,combine chicken broth,lemon juice,garlic,chicken bouillon and dried oregano.
2. Stir well to dissolve bouillon.
3. Add chicken breasts and butter.
4. Cover slow cooker and cook on low-heat setting for 3-4 hours or until chicken just tender (do not overcook!).
5. Remove cooked chicken breasts from slow cooker,reserving cooking liquid, and cut into cubes.
6. In a medium pan,combine cornstarch and water.Stir well to dissolve cornstarch.
7. Add reserved cooking liquid and,stirring, bring mixture to a boil over medium-high heat.
8. Reduce heat to low and simmer for a further 1 minute.
9. Remove from the heat and set aside.
10. Season cornstarch mixture with salt and black pepper.Stir in a few drops of freshly squeezed lemon juice.
11. Pour sauce over cubed chicken,garnish with fresh chopped parsley.
12. Serve over cooked pasta with fresh lemon wedges on side.

Ingredients:

• 2 tablespoons unsalted butter

• 6 large yellow onions,peeled and thinly sliced
• 4 tablespoons olive oil
• 1 teaspoon granulated sugar
• 2 tablespoons unsalted butter
• kosher salt
• 2 cloves garlic,peeled and minced
• 8 cups (2 L) beef or chicken stock
• 1/2 cup (125 ml) dry vermouth
• 2 bay leaves
• 2 teaspoons dry thyme
• 1/2 teaspoon freshly ground black pepper
• 2 tablespoons brandy
• 8 inch-thick (20cm) slices of French bread or baguette.
• 1 1/2 cups (370 g) grated Swiss  Gruyere and Parmesan cheese

Cooking Method:

1. In a large saucepan,heat 3 tablespoons olive oil over medium heat.
2. Add sliced onions and toss well to coat with olive oil.
3. Cook onions,stirring,until softened(for about 15-20 minutes).
4. Increase heat to high.Add remaining olive oil and butter and cook,stirring, for a further 15 minutes or until onions become brown.
5. Sprinkle with sugar and 1 teaspoon kosher salt.Continue to cook until the onions are well browned, about 10 to 15 more minutes.
6. Stir in minced garlic and cook for a further 1 minute.
7. Stir in dry vermouth to the pot and scrape up the browned bits on the bottom and sides of the pot.

11. Stir in brandy.
12. While the soup is simmering, line a sheet pan with aluminum foil.

14. Brush both sides of bread with olive oil.
15. Place in preheated oven and toast until lightly browned, about 5 to 7 minutes.
16. Remove toasted bread from oven.

• 1/3 cup (80 g) finely chopped salted peanuts
• 1/4 cup (60g) minced fresh parsley
• 6 medium skinless and boneless chicken breasts,halved
• unsalted butter
• 1/2 teaspoon paprika
• 2 tablespoons all-purpose flour
• 1 chicken-flavor bouillon cube
• 1 1/4 cups (310 ml) milk
• fresh chopped parsley for garnish
• salt

Cooking Method:

1. In a small mixing bowl,combine chopped peanuts,minced parsley and 1/2 teaspoon salt.
2. Mix well and set aside.
3. Using a meat mallet,pounds each chicken piece until 1/4-inch thick.
4. To stuff chicken breasts:Overlap two pieces about 1-inch.
5. Sprinkle with 1 tablespoon of peanut mixture to within 1/2 inch of edge;fold two long sides slightly toward the middle;roll chicken breast in the opposite direction,jelly-roll fashion;fasten seam with two toothpicks.
6. Repeat this process with remaining chicken breasts.
7. In baking dish,melt 1/2 cup (125 g) butter in 400 F (200 C).
8. Stir in paprika and 1 teaspoon salt until well mixed.
9. Place stuffed chicken breasts,seam side down,in baking dish.Brush with butter mixture in pan.

Ingredients:

• 1 3/4 cups (430 g) all purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/4 teaspoon baking soda
• 1/3 cup (80 g) unsalted butter
• 2/3 cup (160 g) granulated sugar
• 2 large eggs,beaten
• 2 tablespoons dark corn syrup
• 3 ripe bananas,peeled and mashed
• 1/2 cup chopped walnuts

Cooking Method:

1. Grease slow cooker with nonstick cooking spray,then flour it.
2. In a mixing bowl,combine all-purpose flour,baking powder,salt and baking soda.Stir well and set aside.
3. Using electric mixer,in a large bowl,cream butter until fluffy.
4. Stir sugar,eggs,corn syrup and mashed bananas.Beat until smooth.
5. Gradually stir in flour mixture to creamed mixture.Add chopped walnuts and mix well.
6. Pour batter into slow cooker.
7. Cover and cook on high-heat setting for 1-1 1/2 hours or until toothpick inserted into center cones out clean.

Ingredients:

• 6 tablespoons unsalted butter,divided
• 2 tablespoons extra virgin olive oil
• 12 large sea scallops,patted dry
• 1 cup (250 ml) dry white wine
• 2 tablespoons heavy cream
• pinch of saffron threads
• salt and freshly ground black pepper

Cooking Method:

1. In a large nonstick skillet,melt 2 tablespoons unsalted butter and olive oil.
2. Add sea scallops,sprinkle with salt and black pepper,and sear well on both sides,turning once.
3. Remove seared scallops from the skillet and set aside,kipping warm.
4. Add dry white wine to hot pan and de-glaze pan.
5. Reduce heat to low and allow to wine to reduce by half.
6. Stir in heavy cream and remaining butter.Once butter is combined,add saffron threads.
7. Stir well.
8. Return seared scallops to the skillet.Turn well to coat.
