Shrimp-Stuffed Sole Recipe

Shrimp-stuffed sole with delicious homemade sauce.
Makes 4 servings

For Stuffing:
  • 2 tablespoons chopped onion
  • 2 tablespoons unsalted butter
  • 1 cup (250 g) soft bread crumbs
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • dash nutmeg
  • 1/2 cup (125 g) peeled and chopped shrimp
For Sauce:
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup (250 ml) milk
For Topping:
  • 2 tablespoons unsalted butter
  • 1 cup (250 g) soft bread crumbs
  • 1/4 teaspoon salt
  • 1/4 cup (60 g) grated Parmesan cheese
  • lemon and fresh parsley for garnish

Cooking Method:

  1. Wipe the fillets of fish with a damp cloth and lay them skin side up on a plate.
  2. To make the stuffing: heat butter in a large nonstick skillet.
  3. Add chopped onions and fry until tender and transparent (don't brown).
  4. Add remaining stuffing ingredients,mix well.
  5. Place half of mixture on the center of each fish fillet.
  6. Fold the top and bottom of the fillet over and place fillets,ends underneath,in a greased ovenproof dish.
  7. To make the sauce:In a sauce pan,melt the butter.
  8. Add all-purpose flour,then stir in milk,half cup at a time.
  9. Bring to a boil,stirring well.
  10. Pour sauce evenly over stuffed fillets.
  11. To make a topping:In a mall skillet,melt the butter.Remove from the heat and add remaining ingredients.
  12. Sprinkle evenly over fillets.
  13. Preheat oven to 350 F (175 C).
  14. Bake uncovered for 40-45 minutes,or until topping is golden brown and fillets cooked through.
  15. Garnish shrimp-stuffed sole fillet with fresh lemon and parsley.
