Parmesan tomato and spinach tortellini soup. An excellent Italian soup Very easy to make!. This recipe adapted from http://www.closetcooking.com
 Makes 4 servings

Parmesan tomato and spinach tortellini soup

Ingredients:

  • 2 tablespoons melted butter
  • 1 yellow onion,peeled and diced
  • 2 cloves garlic,peeled and chopped
  • red peppers flakes
  • 1/4 cup (60 g) all-purpose flour
  • 3 cups (750 ml) chicken broth
  • 28 oz (840 g) can diced tomatoes
  • 2 tablespoons tomato paste
  • 8 oz (240 g) cheese tortellini
  • 1/2 cup (125 g) freshly grated Parmesan cheese
  • 10 oz (300 g) fresh spinach,chopped
  • 1/2 cup (125 g_ heavy (double) cream
  • 1/4 cup (60 g) fresh basil,chopped
  • salt and freshly ground black pepper


Cooking method:

  1. In a pan,combine melted butter and onion.Cook over medium-high heat until tender,for about 5-7 minutes.
  2. Add chopped garlic and red pepper flakes.Cook,stirring,until fragrant,for a further 1 minute.
  3. Add all-purpose flour.Cook,stirring for another 1 minute.
  4. Stir in,diced tomatoes,tomato paste and tortellini.Bring to a boil,then reduce the heat to low and simmer until tortellini is tender,for about 10 minutes.
  5. Add grated Parmesan and allow to melt.Add fresh spinach and let it wilt.
  6. Stir in (double) cream and season with salt and black pepper.
  7. Remove from the heat,sprinkle with chopped basil and serve.
