• 1/2 cup (125 ml) chilled strong black coffee
• 3 tablespoons Amaretto liqueur,divided
• 4 scoops coffee ice cream
• 1/4 cup (60 g) toasted almonds,chopped
• 1/2 cup (125 g) heavy (double) cream

Cooking Method:

1. In a large mixing bowl,combine heavy cream and 1 tablespoon Amaretto.
2. Beat until soft peaks form.Set aside.
3. Pour chilled black coffee into cocktail glasses.
4. Add 1 tablespoon Amaretto,then Amaretto mixture.
5. Add two scoops of coffee ice cream to each glass.

Pork tenderloin with Marsala sauce. Fried pork chops with delicious sweet Marsala sauce. Very easy recipe.

Ingredients:

• 1 pound (480 g) pork tenderloin,sliced into 1/2-inch (1.2 cm) slices
• 2 tablespoons olive oil
• 3 cloves garlic,peeled and minced
• 1/2 cup (125 ml) sweet Marsala wine
• 2 tablespoons fresh chopped parsley
• all-purpose flour

Cooking Method:

1. Lightly dust pork tenderloin with all-purpose flour.
2. In a large nonstick skillet,heat olive oil over medium-high heat.
3. Add sliced and dusted meat and cook for 3 minutes on each side.
4. Remove cooked pork from the skillet,then reduce heat to medium and add minced garlic.
5. Cook garlic,stirring,for about 1 minute.Add wine and return pork to the skillet.
6. Cook for a further 3 minutes or until meat no longer pink in the center.
7. Remove fried pork from the skillet.
8. Reduce heat to low.Stir in chopped parsley and simmer until wine mixture lightly thickened.

• 10-20 small yellow onions,peeled and layer in the middle removed
• 10-20 small garlic cloves,peeled
• 10-20 glacé cherries
• 3 1/3 oz ( 100 g) unsalted butter,melted
• 2 tablespoons chopped fresh herbs
• 1 cup (250 g) grated cheddar cheese
• 10-20 bacon rashers

Cooking Method:

1. Place garlic clove and cherry inside of each onion.
2. In a mixing bowl,combine melted butter,chopped fresh herbs and grated cheddar cheese.Mix well.
3. Spoon cheddar mixture over stuffed onions.
4. Wrap bacon rasher around each onion and secure with toothpick.
5. Wrap in aluminum foil and broil in broiler until bacon crisp.
6. Remove broiled appetizer from the broiler.

• 6-7 small baked potatoes
• 1 cup (250 g) grated cheddar cheese
• 1/4 cup (60 g) unsalted butter,melted
• 3/4 cup (180 g) bacon,cooked and chopped
• 1/2 cup (125 g) sliced green onions
• sour cream to garnish

Cooking Method:

1. Preheat oven to 400 F (200 C).
2. Using a fork,poke holes in potato on each side.
3. Bake potatoes in preheated oven for 45-50 minutes or until potatoes are tender.
4. Remove baked potatoes from the oven,set aside allow to cool for 15 minutes.
5. Slice baked potatoes lengthwise and carefully scoop out the middles, leaving about an ⅛ inch of potato.
6. Brush both sides of the skins with melted butter,and season with salt and black pepper.
7. Return to the oven and bake for a further 5 minutes.
8. Remove from the oven,sprinkle with grated cheese and bacon.
9. Return to the oven and bake until cheese is melted (for about 2 minutes).

• 1 pound (480 g) sweet Italian chicken sausages
• olive oil
• 1 yellow onion,peeled and chopped
• 4 cloves garlic,peeled and finely chopped
• 1 pound (480 g) Cremini mushrooms,quartered
• 3/4 cup (180 ml) dry white wine
• 16 oz (480 g) package of penne rigate
• 3/4 cup (180g) heavy (double) cream
• 3/4 cup (180 g) grated Parmesan cheese plus extra (to sprinkle on top)
• fresh Italian parsley,chopped
• salt and freshly ground black pepper,to taste

Cooking Method:

1. Cook penne rigate,according a packing instruction.Drizzle with olive oil and set aside. 
2. In a large nonstick skillet,heat olive oil over medium heat.
3. Add chicken sausages.Crumble and brown.
4. Scoot browned sausages to the side,add chopped onion and garlic.
5. Cook,stirring,until onion soften(for about 5-7 minutes).
6. Add Cremini mushrooms and cook,stirring until browned.Season to taste with salt and black pepper.
7. Stir in dry white wine and continue cooking until wine bubbled and reduced.
8. Stir in heavy cream and cooked penne.Toss well to combine.
9. Add grated Parmesan cheese and toss again.
10. Remove cooked pasta with sausage and mushrooms from the heat.

• 4 oz (120 g) plain flour

• 1 large egg,beaten
• 1 tablespoon vegetable oil
• 4 oz (120 ml) milk
• 2 egg whites
• oil for frying
• 3 tablespoons icing sugar

Cooking Method:

1. Pat dry drained pineapple ring with paper towel.Set aside.
2. In a mixing bowl,combine flour and caster sugar.Mix well.
3. Stir in beaten egg,vegetable oil and milk. Beat until smooth.
4. Whisk egg whites until stiff and fold into batter.
5. Heat cooking oil in deep-fryer to 340 F (170 C).
6. Spear the pineapple rings on a fork,deep into batter and carefully lower into hot oil.
7. Fry three at a time for 2-3 minutes until crisp and golden.
