Creamy chicken mushroom pasta. Cooked cubed chicken breasts with mushrooms, penne pasta and wine ,served with delicious homemade creamy sauce.
Makes 4 servings
Ingredients:
1/2 cup (125 ml) cream
1 cup sliced mushrooms
1 small yellow onion,peeled and diced
1 zucchini,sliced
1 package of penne pasta
2 whole skinless and boneless chicken breasts,cubed
3 cloves garlic,peeled and finely chopped
2 tablespoon dry white wine
olive oil
salt and freshly ground black pepper

Ingredients:

Cooking Method:
- Pour water in a large saucepan. Bring to boil over medium-high heat.
- Add in penne pasta and continue to boil until pasta is cooked through.
- Strain cooked penne pasta into a large colander and run under cold water until completely cold.
- In a large nonstick skillet,heat olive oil over medium-high heat.
- Add cubed chicken and cook gently until the chicken is sealed all over.
- Stir in garlic and cook for 1-2 minutes.
- Stir in onions,zucchini and mushrooms and continue cooking until vegetables have softened .
- Stir in dry white wine and allow to bubble up.
- Season with salt and black pepper.
- Stir in cream and bring to a boil over medium-high heat.
- Reduce heat to low and simmer for 4-5 minutes.
- Add cooked pasta and stir well.
- Serve immediately.
