Ingredients:

• 2/3 oz (20 g) unsalted butter,melted
• 3 tablespoons runny honey
• 1 tablespoon Dijon mustard
• zest of half lemon
• salt and freshly ground black pepper
• 1/2 pound (240 g) fresh asparagus,trimmed
• 4 salmon fillets
• lemon wedges

Cooking Method:

1. In a mixing bowl,combine melted butter,honey,mustard and lemon zest.Mix well and season to taste with salt and black pepper.
2. Prepare 4 squares of aluminum foil,big enough to parcel the fish.
3. Place trimmed asparagus on each of the tin foil squares,followed by the salmon fillets.
4. Drizzle with honey mixture.Place lemon wedges.
5. Seal the aluminum foil securely.
6. Preheat the halogen (turbo) oven to 420 F (210 C).
7. Arrange salmon and asparagus parcels on middle rack of turbo oven.

Ingredients:

• 1/4 cup (60 g) unsalted butter,melted
• 3 slices bacon,chopped
• 1 carrot,peeled and chopped
• 1 stalk celery,chopped
• 1 yellow onion,peeled and sliced
• 1/2 cup (125 g) all-purpose flour
• 2 1/2 cups (725 ml) beef stock
• 4 mushrooms,washed and sliced
• 1/2 cup (125 g) tomato paste
• 1 bouquet garni
• 1/4 cup (60 ml) sherry
• salt and freshly ground black pepper to taste

Cooking Method:

1. In a heavy saucepan,heat melted butter.
2. Add chopped bacon,carrot,celery and onion.Cook,stirring,until vegetables are golden brown.
3. Stir in all-purpose flour.
4. Cook over medium heat until the roux is a deep golden brown (for about 12-15 minutes).
5. Stir in beef stock,increase heat to high and ,stirring,bring to a boil.
6. Add the mushrooms,tomato paste,bouquet garni and seasoning.Reduce heat to low and simmer for for 1 hour,stirring frequently.
7. Strain through the fine strainer.
8. Add the sherry,then taste and adjust the flavor if necessary.

• 5 cups (1.25 L) homemade chicken stock
• 1 boneless and skinless chicken breast,cut into 1-inch (2.5 cm) pieces
• 1/4 cup (60 g) unsalted butter,melted
• 1/2 cup (125 g) all-purpose flour
• 2 1/2 cups (625 g) scalded milk
• 1 small stalk fresh celery,finely chopped
• few drops Tabasco sauce
• 2 egg yolks
• salt and freshly ground black pepper

Cooking Method:

1. Heat melted butter in a large heavy pan.
2. Stir in all-purpose flour and cook for a about 1 minute.
3. Add half of chicken stock.Cook,stirring,over medium heat until boiling.
4. Add remaining stock,scalded milk,chicken pieces,celery,Tabasco sauce and seasoning.
5. Bring to a boil.
6. Reduce heat to low and simmer,covered,for 5 minutes.
7. In a small mixing bowl,beat the egg yolks with a fork and pour into heated tureen.
8. Pour chicken soup slowly over beaten egg yolks,stirring all the time with wooden spoon.
9. Serve immediately.

Ingredients:

• 1 tablespoon unsalted butter
• 1 large yellow onion,peeled and chopped
• 1 pound (480 g) celery,trimmed and diced
• 1/2 cup (125 ml) whiskey
• 1/2 cup (125 ml) dry white wine
• 3 cups (750 ml) vegetable bouillon
• 5 oz (150 g) cream
• 1 teaspoon curry powder
• dash of cayenne pepper
• freshly squeezed lemon juice
• salt and freshly ground black pepper
• 3 1/3 oz (100 g) Stilton cheese
• 8 slices of roasted baguette

Cooking Method:

• Melt butter in a large nonstick skillet.
• Add onion and celery and brown for a few minutes.
• Add whiskey and dry white wine and continue to cook over medium-high heat until reduced by half.
• Reduce heat to low and simmer for about 25 minutes.
• Stir in the cream
• Puree the soup.Add lemon juice and season with curry powder,paprika salt and black pepper.

1. In a deep fryer,heat vegetable oi over medium heat.
2. Place chicken wings in hot oil and deep fry for 10 minutes or to 165°F (330 C) internal temperature.

Cooking Method:

1. Place garlic clove and cherry inside of each onion.

• 1 cup (250 g) grated cheddar cheese

Cooking Method:

1. Preheat oven to 400 F (200 C).
2. Using a fork,poke holes in potato on each side.
3. Bake potatoes in preheated oven for 45-50 minutes or until potatoes are tender.

5. Slice baked potatoes lengthwise and carefully scoop out the middles, leaving about an ⅛ inch of potato.

• 3/4 cup (180 g) unsalted butter
• 3/4 cup (180 g) granulated sugar
• 3 large eggs,beaten
• 3/4 cup (180 g) self-raising flour
• 1 teaspoon vanilla essence
• 1 2/3 oz (50 g) chocolate chips

Cooking Method:

1. Preheat turbo oven to 400 F (200 C).
2. In a mixing bowl,combine butter and sugar.Beat until pale and fluffy.
3. Stir in beaten eggs and vanilla essence.Beat well.
4. Sift self-raising flour and fold into mixture gently.
5. When thoroughly mixed,add the chocolate chips and stir again.
6. Place in cupcake cases and arrange on low rack of turbo oven.
7. Cook in preheated oven for 15-18 minutes.

• 1/4 cup (60 g) light brown sugar

• 1/2 cup (125 g) whole-wheat flour
• 1/2 cup (125 g) quick-cooking oats
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 teaspoon freshly ground cinnamon
• 1/4 teaspoon baking soda
• 1/4 teaspoon ground cloves
• Buttery Glaze (see recipe below)

Cooking Method:

1. In a large mixing bowl,combine butter and brown sugar.
2. Mix until well blended.

Cooking method:

1. In a pan,combine melted butter and onion.Cook over medium-high heat until tender,for about 5-7 minutes.

Oven grilled lobster tails with Sriracha butter. Very delicious lobster recipe.Very easy to make.!
Makes 2 servings

Ingredients:

• 2 (8 oz (240 g) each)) frozen lobster tails,thawed
• 4 tablespoons Land O Lakes® Butter with Olive Oil (just eyeball about 1/4 of the tub)
•  2 tablespoons sriracha
• chopped fresh chives
• 1 lemon,cut into wedges

Cooking Method:

1. Place thawed lobster tails in ziploc plastic bag.Seal tightly.
2. Place ziploc bag with lobster tails in a large bowl.Cover with cold water and set aside for 10 minutes.
3. Drain water and repeat a process 2 more times.
4. Rinse lobster tails under cold running water and pat dry with paper towel.
5. Using a kitchen shears,butterfly the tails by cutting lengthwise through the centers of the hard top shells and about half-way through the top of the meat.
6.  In a small mixing bowl,combine butter and sriracha.Stir well.
7. Preheat your grill at 475 F (240 C).
8. Spread 1 tablespoon of sriracha mixture over each lobster tail.
9. Arrange lobster tails on the grill, meat side down on the grates.Grill for about 4-5 minutes.
10. Turn lobster tails over and spread remaining sriracha mixture over.

• 8 oz (240 g) mushrooms
• 2 tablespoons minced shallots
• 1 clove garlic,peeled and minced
• 1/3 cup (80 ml) Marsala wine
• 1/3 cup (80 ml) chicken stock
• 1 tablespoon fresh parsley,finely chopped
• kosher salt and freshly ground black pepper,to taste

Cooking Method: 

1. Season chicken breasts with salt and black pepper.
2. Dredge in 1/3 cup  all-purpose flour.Set aside.
3. In a large nonstick skillet,heat 2 tablespoons extra virgin olive oil and 1 tablespoon butter.
4. Working in a batches,add seasoned chicken and cook , turning once , until golden brown (for about 3 minutes per side).
5. Transfer cooked chicken to serving platter and set aside.
6.  Add 2tablespoons olive oil and 1 tablespoon melted butter, and then add mushrooms; cook until golden brown, about 8 minutes. Transfer to plate with chicken, and set aside.
7. Using the same skillet,heat remaining olive oil.Add minced shallots and garlic and cook,stirring,for 1 minute.
8. Stir in remaining all-purpose flour and cook for a further 2 minutes.
9. Add Marsala wine and chicken stock and continue to cook,stirring and scraping bottom of pan until slightly thick (for about 2 minutes).
10. Return cooked chicken and mushrooms to the skillet.Cook until heated through (for about 2 minutes).
11. Remove from the heat and stir in remaining melted butter.
12. Season with slat and black pepper.
13. Sprinkle with fresh chopped parsley and serve immediately.

Cheesy steak egg rolls. Delicious fried egg rolls served with homemade horseradish sauce. Very easy recipe.
Makes 10 egg rolls

Ingredients:

• 10 egg rolls wrappers
• 2 cups (500 g) cooked sirloin steak strips
• half of green bell pepper,thinly sliced
• 1/2 of red onion,thinly sliced
• 3 tablespoons unsalted butter ,melted
• 1/2 teaspoon garlic powder
• 5 slices of provolone cheese,cut into halves
• canola oil for frying
• 1 large egg,beaten

For the Horseradish Sauce:

• 1/2 cup (125 g) light mayo
• 1 tablespoon milk
• 1 teaspoon horseradish
• 1/4 teaspoon garlic powder
• 1/8 teaspoon freshly cracked black pepper

Cooking Method:

1. Pour into your fryer  at least 1-inch (2,5 cm) of canola oil.
2. Heat to 375 F (185 C).
3. Heat melted butter in a saute pan over medium heat.Add sliced green bell peppers and onions and cook until soft and tender (for about 5 minutes). Add sirloin steak strips and garlic powder and stir well to combine.
4. Remove from the heat ,set aside and let coll at room temperature.
5. Meanwhile,put an egg roll wrapper on a clean dry surface.
6. Brush all the edges with the  beaten egg. 
7.  Place a couple strips of sirloin steak,green bell pepper and onions in the center of egg roll wrapper and top of half of provolone cheese.
8. Fold the bottom corner of the wrapper over the filling then fold in the right side and left side.
9. Roll all corners and seal tightly.
10. Repeat the same steps with remaining egg rolls and fillings.
11. Working in the batches,fry rolls in hot oil for 3-5 minutes or until golden brown.
12. Pat dry with paper towel.

For the Horseradish Sauce:

1. In a small mixing bowl,combine all sauce ingredients.
2. Mix well.
3. Serve cheesy steak egg rolls with homemade horseradish sauce.
