Cheesy chicken soup. This is very easy chicken soup recipe.Quick and delicious!

Ingredients:
- 2 teaspoons olive oil
- 1 large yellow onion,peeled and diced
- 1 pound (480 g) boneless and skinless chicken thighs,cut into bite pieces
- 3 cloves garlic,peeled and minced
- 1/2 teaspoon crushed fennel seeds
- pinch of red pepper flakes
- 6 cups (1.5 L) homemade chicken broth
- 28 oz (840 g) can diced tomatoes
- 1 cup (250 g) tomato sauce
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- 2 cups (500 g) uncooked noodles
- 1 cup (250 g) shredded Parmesan cheese
- fresh basil for garnish
Cooking Method:
- Heat olive oil in a large pot.
- Add diced onions and chicken pieces and saute until onions are soft and chicken browned on all sides.
- Add minced garlic,crushed fennel seeds and red pepper flakes.Continue to cook,stirring,until fragrant (for about 1 minute).
- Add remaining ingredients,except Parmesan and fresh basil, and bring to a boil.
- Reduce heat to low and simmer,stirring occasionally, until noodles are tender.
- Stir in shredded Parmesan cheese and cook until cheese melted.
- Remove from the heat and ladle into bowls.
- Garnish with fresh basil and serve.
