Oven baked orange-glazed chicken.Orange-rosemary glazed chicken breasts baked in oven .Very easy and delicious chicken breasts recipe!
Makes 4 servings
Ingredients:
4 chicken breast halves, bone-in and skin-on
1 tablespoon olive oil
1 tablespoon minced rosemary leaves
1 tablespoon minced Italian flat leaf parsley
1 teaspoon grated orange zest
1 teaspoon salt and 1/2 teaspoon freshly ground black pepper
4 fresh rosemary sprigs
For the Glaze:
1/2 cup orange marmalade
1/2 cup (125 ml) orange juice
2 tablespoons red wine vinegar
2 tablespoons chicken stock
1 tablespoon minced fresh rosemary leaves
1/8 teaspoon crushed red pepper flakes
1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper

Cooking Method:
- Preheat your oven to 425 F (210 C).
- For the Glaze:In a small saucepan,combine all ingredients.Mix well.
- Bring orange mixture to a boil over high heat.
- Reduce heat to low and simmer for 5 minutes.
- Remove pan from the heat.Reserve 1/4 cup (60 ml) of mixture in a small bowl.
- Pour remaining sauce into pitcher and place on the table.
- In a large nonstick skillet,heat 1 tablespoon olive oil.
- In a small bowl,combine remaining ingredients,except chicken breasts.Mix well.
- Rub rosemary mixture all over chicken breasts.
- Place chicken, skin-side down, in skillet and brown, about 4 minutes.
- Remove browned chicken breasts from the skillet.
- Place rosemary sprigs in pan and place chicken breasts, skin-side up, on top of the rosemary sprigs.
- Roast in preheated oven for 15-20 minutes, brushing chicken breasts with ¼ cup of glaze several times during the last 10 minutes of cooking.
