Ingredients:
- 3 pounds (1.44 kg) bone-in chicken breasts,skin removed
- 14 oz (420 ml) can Italian-style petite-cut diced tomatoes,undrained
- 6 oz (180 ml) can tomato paste
- 1 1/2 teaspoons minced garlic
- 16 oz (480 g) package frozen pepper stir-fry,thawed and drained
- 1/4 cup (60 ml) dry red wine
- salt and freshly ground black pepper to taste
Cooking Method:
- Grease inside of slow cooker with nonstick cooking spray.
- In a greased slow cooker,combine all ingredients.Mix well.
- Cover and cook on low-heat setting for 6-8 hours or until chicken is tender.
- Remove cooked chicken with tomato sauce from slow cooker.Season to taste with salt and black pepper.Stir well and serve immediately.
