Grilled shrimp with sausage and polenta. Spicy shrimp,sausages and polenta grilled on gas or charcoal grill.
Ingredients:
- 2 spicy sausages,cut roughly
- 1 pound (480 g) raw shrimp,peeled and deveined
- 1 tube cooked polenta
- 1 red bell pepper,seeded and cut roughly
- 1 white onion,peeled and cut roughly
For the Marinade:
- 1/2 cup (125 ml) avocado oil
- 1 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon smoked paprika
- kosher salt
Cooking Method:
- Thread, alternating , sausages , polenta , shrimp, red belle pepper and onions onto metal skewers.
- In a mixing bowl,combine all marinade ingredients.Mix well.Brush onto the skewers, focusing on the shrimp and polenta pieces.
- Season with salt to taste
- Preheat gas grill to 350 F (175 C).
- Grill over low heat,turning occasionally,for 8-10 minutes.
- Serve grilled shrimp with sausage and polenta hot.

Slow cooker maple mustard chicken. Chicken breasts with maple syrup and mustard cooked in slow cooker. Delicious slow cooker chicken recipe!

Ingredients:
- 4-6 chicken breasts,boned and skinned
- 1/2 cup (125 g) maple syrup
- 1/3 cup (80 g) Dijon mustard
- 2 tablespoons quick-cooking tapioca
Cooking Method:
- Lightly grease slow cooker with nonstick cooking spray.
- Place chicken breasts inside of slow cooker.
- In a small mixing bowl,combine remaining ingredients.Stir well and pour over chicken.
- Cover slow cooker and cook on low-heat setting for 3-4 hours or until chicken is tender.
- Serve slow cooker maple mustard chicken over cooked rice.

Mashed peas on toasted bread. Very delicious and easy breakfast recipe. Adapted from http://www.eatwell101.com/
Makes 1 serving
Ingredients:
- 1 large egg,poached
- 1 slice of bread,toasted
- 1/2 cup (125 g) green peas
- crumbled feta cheese
- extra virgin olive oil
- fresh cilantro,chopped
- salt and freshly ground black pepper,to taste
Cooking Method:
- In a small pan,combine water and salt.
- Bring to a boil.
- Place green peas in a boiling water fro 2 minutes , then rinse and drain well.
- In a mixing bowl,combine drained peas,chopped cilantro,crumbled feta cheese and olive oil.Using a wooden spoon,mash peas with remaining ingredients.
- On a slice of toasted bread,spread mashed peas mixture.Top with poached egg,season with salt and black pepper.
- Serve immediately.

Tropical fruit smoothie.This is very easy and delicious nonalcoholic mixed drink.
Makes 2 servings.

Ingredients:
- 1 cup (250 g) frozen berries (strawberries and raspberries)
- 1 ripe banana,peeled and cut into chunks
- 1/3 cup raw coconut meat,chopped
- 1 cup (250 ml) coconut milk
- 1 cup (250 g) frozen mango chunks
- 1 cup (250 ml) fresh pineapple juice
- half of ripe fresh pineapple,cut into cubes
- 1 ripe kiwi,peeled and sliced
Cooking Method:
- In a blender,combine frozen berries,banana chunks,coconut meat and coconut milk.
- Blend until smooth.
- Pour mixture into tall glasses.
- Wash your blender out.Combine remaining ingredients in a blender.
- Blend until smooth and pour pineapple mixture over berry mixture.
- Serve with a straw.

Creamy tomato basil soup. Very delicious tomato soup recipe. Easy to make!
Ingredients:
- 3 tablespoons olive oil
- 2 medium red onions,peeled and chopped
- 3 cloves garlic,peeled and minced
- 28 oz (840 g) can crushed tomatoes
- 1 cup (250 g) heavy (double) cream
- 1 bunch fresh basil,chopped
- grated Parmesan cheese for garnish
- kosher salt and freshly ground black pepper
Cooking Method:
- Preheat olive oil in a large pot.
- Add chopped onions and season with kosher salt.Cook,stirring occasionally,until golden brown.
- Add minced garlic and cook,stirring,for a further 1 minute.
- Stir in crushed tomatoes and chicken stock.Season with kosher salt and black pepper.
- Bring soup to a boil,then reduce heat to low and simmer for 15 minutes.
- Remove soup from the heat,set aside and allow to cool.
- Pour cooled soup into a blender.Blend until smooth.
- Return mixture to the pot.Stir in heavy (double cream) and chopped basil.
- Simmer for a further 15 minutes.
- Remove from the heat,ladle into bowls and top with grated Parmesan cheese.

Ingredients:
- 2 teaspoons olive oil
- 1 large yellow onion,peeled and diced
- 1 pound (480 g) boneless and skinless chicken thighs,cut into bite pieces
- 3 cloves garlic,peeled and minced
- 1/2 teaspoon crushed fennel seeds
- pinch of red pepper flakes
- 6 cups (1.5 L) homemade chicken broth
- 28 oz (840 g) can diced tomatoes
- 1 cup (250 g) tomato sauce
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- 2 cups (500 g) uncooked noodles
- 1 cup (250 g) shredded Parmesan cheese
- fresh basil for garnish
Cooking Method:
- Heat olive oil in a large pot.
- Add diced onions and chicken pieces and saute until onions are soft and chicken browned on all sides.
- Add minced garlic,crushed fennel seeds and red pepper flakes.Continue to cook,stirring,until fragrant (for about 1 minute).
- Add remaining ingredients,except Parmesan and fresh basil, and bring to a boil.
- Reduce heat to low and simmer,stirring occasionally, until noodles are tender.
- Stir in shredded Parmesan cheese and cook until cheese melted.
- Remove from the heat and ladle into bowls.
- Garnish with fresh basil and serve.
