Oven baked beef taquitos. Very easy and delicious recipe. Easy & simple.
Ingredients:
- 1 pound (480 g) ground beef
- 3 tablespoons cream cheese,softened
- 1 teaspoon ranch dressing mix
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic salt
- 1 cup (250 g) BBQ sauce
- salt to taste
- 1 cup 9250 g) shredded Monterey Jack cheese
- 15 small flour tortillas
Cooking Method:
- Cook ground beef in a medium nonstick skillet until browned and juices run clear.
- Preheat oven to 400 F (200 C).
- In a large mixing bowl,combine cooked ground beef and remaining ingredients,except salt and tortillas.Stir well to combine. Add salt to taste.
- Spoon beef mixture into the center of each tortilla.
- Grease baking sheet with nonstick cooking spray.
- Roll up tortillas and place in a one layer on the greased baking sheet.
- Lightly grease top of tortilla rolls with cooking spray.
- Bake in preheated oven for 15 minutes or until golden brown.

Strawberry margarita cocktail.An excellent tequila based mixed drink recipe. Very easy to make.

Ingredients:
- strawberry sugar (recipe follows)
- 1 lime wedge
- 1 1/2 oz (45 ml) blue agave blanco tequila
- 3/4 oz (25 ml) freshly squeezed lime juice
- 1 oz (30 ml) Aperol
- 1 1/2 oz (45 ml) strawberry pure (see recipe below)
- fresh strawberry for garnish
Cooking Method:
- Spread a strawberry sugar on a small plate.
- Moisten the rim of cocktail glass with lime wedge and dip it into strawberry sugar.
- In a cocktail shaker,combine tequila,lime juice,Aperol,strawberry pure and cubed ice.
- Shake well.
- Strain mixture into prepared cocktail glass and serve immediately.
To Make Strawberry Sugar:
- In a small food processor,combine equal parts of freeze-dried strawberries and granulated sugar.
- Process until smooth.
To Make Strawberry Puree:
- In a blender or food processor,combine 2 cups strawberry halves and 1/2 cup sugar.
- Process until smooth.
- Keep in storage container.

- 4 pounds (2 kg) boneless lamb shoulder,cut into bite-size pieces
- 1 tablespoon dried oregano
- freshly squeezed lemon juice of 1 lemon
- 5 oz (150 ml) extra virgin olive oil
- paprika
- salt and freshly ground black pepper
Cooking Method:
- In a large mixing bowl,combine all ingredients,except paprika.
- Mix well,set aside and allow to marinate at room temperature for 1 hour.
- Preheat gas grill .
- Thread marinated lamb onto metal skewers.
- Cook on preheated barbecue until browned.
- Sprinkle with paprika and lemon juice and serve.

- 1/3 cup (80 g) melted butter
- 1 1/2 cups chopped yellow onion
- 2 cloves garlic,peeled and minced
- 6 tablespoons all-purpose flour
- 24 oz (720 ml) evaporated milk
- 5 cups (1.25 L) low-sodium chicken broth
- 5 cups (1.25 kg) diced broccoli florets
- 1/8 teaspoon dried thyme
- 1/2 cup (125 g) heavy (double) cream
- 12 oz (360 g) sharp cheddar cheese,shredded
- 2 oz (60 g) shredded Parmesan cheese
- salt and freshly ground black pepper
Cooking Method:
- In a large nonstick skillet,heat butter over medium heat.
- Add chopped onions and saute until they begin to soften,for 3-4 minutes.
- Add minced garlic and all-purpose flour,season with salt and pepper and cook,stirring,for 2 minutes.
- Pour in evaporated milk,whisking well(until smooth) and continue cooking,stirring occasionally,until it begins to thicken.
- Pour mixture into a slow cooker along with chicken broth,diced broccoli and thyme.
- Cover slow cooker and cook on low-heat setting for 6 hours.
- Turn off the heat,stir in heavy cream,shredded cheddar cheese and Parmesan.
- Stir well,season to taste with salt and black pepper and serve.

- 3 eggplants,peeled and thinly sliced
- 2 large eggs,beaten
- 4 cups (1 kg) Italian seasoned bread crumbs
- 6 cups (1,5 kg) spaghetti sauce,divided
- 1 16 oz (480 g) package mozzarella cheese,shredded and divided
- 1/2 teaspoon dried basil
Cooking Method:
- Preheat your oven to 375 F (175 C).
- Place bread crumbs in a shallow bowl.In another bowl,place beaten eggs.
- Dip eggplant slices in beaten eggs,then in bread crumbs.
- Arrange in a single layer in a baking sheet.
- Bake in preheated oven for about 5 minutes on each side.
- Cover bottom of baking dish with spaghetti sauce.
- Place a layer of baked eggplants in the sauce.
- Sprinkle with mozzarella and Parmesan cheeses.
- Repeat with remaining ingredients,ending with cheeses.
- Sprinkle dried basil on the top.
- Bake in preheated oven for 35 minutes or until golden brown.
