Slow Cooker Sweet and Sour Pork tenderloin

• 2 pounds (960 g) pork tenderloin,cubed
• 20 oz (600 ml) can pineapple chunks in juice,drained
• 1 red bell pepper,chunked
• 1 medium yellow onion>peeled and sliced
• 1/2 cup (125 ml) canned water chestnuts,drained
• 10 oz (300 ml) jar sweet and sour sauce
• 2 tablespoons all-purpose flour
• 5 tablespoons water

Cooking Method:

1. Grease slow cooker with nonstick cooking spray.
2. In greased slow cooker,combine pork cubes,pineapple,bell pepper,onion,water chestnuts and sweet and sour sauce.
3. Mix well.Cover slow cooker and cook on low-heat setting for 7-9 hours.
4. Remove cooked pork and remaining cooked ingredients fro slow cooker.
5. In a small mixing bowl,combine all-purpose flour and water.Mix until flour dissolved.
6. Increase heat to high.Add flour mixture to slow cooker and cook,covered,for 5 minutes or until mixture thickened.
7. Return pork with remaining ingredients to slow cooker and heat through.

Pressure Cooker Creamy Roasted Red Pepper Soup

Pressure cooker creamy roasted red pepper soup. Delicious vegetable soup cooked in pressure cooker.An excellent soup recipe for vegetarians!

• 1/4 cup (60 g) unsalted butter
• 1 large white onion,peeled and chopped
• 16 oz (480 ml) jar roasted red pepper,drained
• 2 large russet potatoes,peeled and cubed
• 1 jalapeno pepper,seeded
• 1 teaspoon Worcestershire sauce
• 4 cups (1 L) chicken or (for vegetarians)vegetable broth
• 2 cups (500 ml) heavy (double) cream
• salt to taste

1. Melt unsalted butter in pressure cooker over medium-high heat.
2. Add chopped onion,reduce heat to low,and cook,stirring,for 2-3 minutes or until it begins soften.
3. Add peppers,cubed potatoes, jalapeno,Worcestershire sauce and broth.
4. Close pressure cooker and set burner heat to high.
5. When pressure cooker reaches high pressure,reduce heat to low and set timer to cook for 6 minutes.
6. Remove pot form the heat and open pressure cooker with quick release method.
7. Puree soup in pressure cooker,using immersion blender.
8. Season to taste with salt.
9. Stir in heavy cream and simmer over low heat for 5-10 minutes.Do not boil.
10. Serve pressure cooker roasted red pepper soup immediately.

Cooking Method:
For the Bourbon Sauce:

1. In a small saucepan,combine all sauce ingredients.
2. Mix well and bring to a simmer over low heat.
3. Simmer,stirring,occasionally,for about 5-6 minutes.

Slow Cooker White Chicken Chili

Slow cooker white chicken chili. Chicken with vegetables,herbs and spices cooked in slow cooker.

Makes 8 servings

• 6 skinless chicken thighs
• 1 large yellow onion,peeled and chopped
• 2 cloves garlic,peeled and finely chopped
• 14 1/2 oz (435 ml) can chicken broth
• 1 teaspoon freshly ground cumin
• 1 teaspoon dried oregano leaves
• 1/2 teaspoon salt
• 1/4 teaspoon red pepper sauce
• 2 cans (15 oz (450 ml)) each great northern beans,rinsed and drained
• 3 tablespoons freshly squeezed lemon juice
• 2 tablespoons chopped fresh cilantro

Cooking Method:

1. In a slow cooker,combine onion,garlic,broth,cumin,oregano,salt and red pepper sauce.
2. Mix well and stir in chicken.
3. Cover slow cooker and cook on low-heat setting for 4-5 hours.
4. Remove cooked chicken from slow cooker.
5. Using 2 forks,remove bones and shred meat into pieces.
6. Return chicken pieces to slow cooker.
7. Stir in beans,lime juice and cilantro.Cover slow cooker and cook on low-heat setting for a further 15-20 minutes or until beans are hot.

Slow Cooker Dijon Pork Chops

Makes 4 servings

• 10 3/4 oz (325 ml) can condensed cream of mushroom soup
• 1/4 cup (60 ml) dry white wine
• 1/4 cup (60 ml) Dijon-style mustard
• 1 teaspoon dried thyme,crushed
• 1 clove garlic,peeled and minced
• 1/4 teaspoon freshly ground black pepper
• 5 medium potatoes,cut into slices
• 1 medium yellow onion,peeled and sliced
• 4 pork loin chops 3/4 inch thick

Cooking Method:

1. In a large mixing bowl,combine soup,dry white wine,Dijon mustard,thyme,garlic and black pepper.Mix well.
2. Stir in potatoes and onions.
3. Transfer mustard mixture to slow cooker.
4. Arrange pork chops over mixture.
5. Cover slow cooker and cook on low heat setting for 7-8 hours.

Slow Cooker Wine-Braised Beef Short Ribs

• 6 pounds (2.9 kg) beef short ribs,fat trimmed
• 1/2 cup (125 g) all-purpose flour
• 1/2 teaspoon salt
• 1/4 teaspoon freshly ground black pepper
• 1/3 cup (80 ml) olive oil
• 2 large yellow onions,peeled and chopped
• 2 medium carrots,peeled and chopped
• 1 stalk celery,chopped
• Dijon mustard
• 8 cloves garlic,peeled and halved
• 1 teaspoon dried herbes de Provence,crushed
• 14 1/2 oz (435 ml) diced tomatoes,undrained
• 1 cup(250 ml) reduced-sodium beef broth
• 1 cup (250 ml) Beaujolais wine
• 2 tablespoons cornstarch
• salt and freshly ground black pepper to taste

Cooking Method:

1. In a plastic bag,combine all-purpose flour,1/2 teaspoon salt and 1/4 teaspoon black pepper.Mix well.
2. Add beef ribs,a few at a time,and shake well to coat.
3. In a large nonstick skillet,heat olive oil over medium-high heat.
4. Working in a batches,brown ribs on all sides. Remove browned ribs from the skillet and transfer to slow cooker.
5. Drain and discard all but 2 tablespoons drippings from skillet.Add onions,carrots and celery and cook,stirring,for 10-15 minutes or until tender.
6. Stir in Dijon mustard and herbes de Provence.Cook,stirring,for a further 2 minutes.
7. Remove vegetable mixture from the skillet and transfer to slow cooker.Stir in tomatoes,beef broth and wine.
8. Cover slow cooker and cook on low-heat setting for 8-10 hours.
9. Using a slotted spoon,remove cooked ribs and vegetables from slow cooker,reserving a cooking liquid, and transfer to serving platter.
10. Cover cooked ribs and vegetables with aluminum foil and keep warm.
11. For the sauce,skim fat from reserved cooking liquid,measure 3 cups (750 ml) cooking Discard the remaining cooking liquid.
12. In saucepan, combine 3 cups (750 ml) cooking liquid and cornstarch.Cook,stirring,over medium-high heat until thickened and bubbly.
13. Cook,stirring,for a further 2 minutes.
14. Season to taste with salt and black pepper.
15. Pour sauce over beef ribs and vegetable and serve.

Slow Cooker Mushroom-Stuffed Beef Steak

Slow cooker mushroom-stuffed beef steak.Beef flank steak with mushrooms,dry red wine,bacon and vegetables cooked in slow cooker.Easy and delicious beef recipe.

• 3 slices bacon
• 8 oz (240 g) Cremini mushrooms,sliced
• 1/4 cup (60 g) chopped yellow onion
• 3/4 teaspoon dried thyme leaves
• 1 beef flank steak
• 3/4 cup (180 ml) dry red wine
• 4 cups (1 L) cooked rice
• salt and freshly ground black pepper to taste

Cooking Method:

1. In a large nonstick skillet,cook bacon over medium heat until crisp.Drain and crumble.
2. Discard all but 1 tablespoon bacon fat.Add sliced mushrooms,onion and thyme to skillet and saute until tender (5-8 minutes).
3. Stir in crumbled bacon,season to taste with salt and black pepper.
4. Using a meat mallet,pound beef steak to make even in thickness.
5. Spoon mushroom mixture over meat and roll up.
6. Secure with toothpicks and place in slow cooker.
7. Pour over dry red wine.
8. Cover slow cooker and cook on low-heat setting for 6-8 hours.
9. Remove cooked beef flank steak from slow cooker.
10. Slice and serve over cooked rice.

Slow Cooker Chicken Tetrazzini

Slow cooker chicken tetrazzini. This is one of my favorite chicken recipes cooked in slow cooker. Chicken breasts with creamy mushrooms soup,cheese and vegetables.This yummy chicken recipe serves over cooked spaghetti.

• 3 cups (750 g) cooked chicken breasts
• 2 10 3/4 oz (325 ml each) cans low-fat cream of mushroom soup
• 1 cup (250 g) chopped yellow onion
• 1 teaspoon minced garlic
• 1 1/2 cups (370 g) nonfat shredded Cheddar cheese
• 1 can frozen green peas,thawed and drained
• 4 cups (1 kg) cooked spaghetti
• freshly ground black pepper

Cooking Method:

1. Grease in side of slow cooker with nonstick cooking spray.
2. In greased slow cooker,combine all ingredients,except spaghetti.Mix lightly.
3. Cover and cook on low-heat setting for 4-6 hours.
4. Cook spaghetti,according cooking instruction.
5. Remove cooked chicken with mushroom gravy from slow cooker.
6. Serve over cooked spaghetti

• 1 yellow onion,peeled and finely chopped
• 2/3 cup (150 ml) passata (bottled strained tomatoes)
• 1/3 cup (75 ml) boiling fish stock
• 2 garlic cloves,peeled and crushed
• 1 small red chili pepper,seeded and finely chopped
• pinch of ground ginger
• pinch of curry powder
• pinch of freshly ground cumin
• pinch of freshly ground turmeric
• seeds from 1 cardamom pod
• freshly squeezed juice of 1 lemon
• 2 pounds (960 g) white fish fillets
• 2 tablespoons chopped fresh coriander
• 2 tablespoons chopped fresh parsley
• salt and freshly ground black pepper,to taste

Cooking Method:

1. In a frying pan,heat vegetable oil over medium-high heat.
2. Add chopped onion and cook,stirring,for 10 minutes until onion is soft but not coloured.
3. Transfer cooked onions to slow cooker.Stir in remaining ingredients,except fish fillets and fresh herbs.
4. Cover slow cooker and cook on high-heat setting for 1 1/2 hours until mixture starts simmering.
5. Add white fish fillets to the slow cooker and cook at low-heat setting for a further 45 minutes-1 hour or until fish fillets are tender.
6. Transfer cooked fish to warmed serving platter.Stir fresh herbs into spicy tomato sauce.Test and add seasoning.

• 8-10 chicken drumsticks
• 1/4 cup (60 g) sweet onion,chopped
• 1 tablespoon minced garlic
• 16 1/2 oz (500 g) fresh raspberries
• 2 chipotle chiles in adobe sauce, chopped
• 2 teaspoons adobe sauce
• 2 tablespoons lime juice
• 1 tablespoon clear honey
• fresh basil,to garnish

Cooking Method:

1. Preheat oven to 425 F (210 C).
2. Pat dry chicken drumsticks with paper towel.
3. Season with salt and black pepper.
4.  Spray baking rack with nonstick cooking spray and cover with aluminum foil.
5. Arrange seasoned chicken drumsticks on foil covered baking sheet.
6. Roast chicken in preheated oven for 30 minutes.
7. Meanwhile,prepare raspberry-chipotle sauce.
8. Spray saucepan with nonstick cooking spray.Add onions and garlic and saute for 4-5 minutes until onions are translucent.
9. Stir in raspberries,chilies,adobo sauce,lime juice and honey.Mix well and cook over medium heat for 2-3 minutes.
10. When chicken drumsticks are almost done,remove from the oven and baste one side with raspberry-chipotle sauce.
11. Return chicken to the oven and cook for a further 2-3 minutes.
12. Remove chicken drumsticks with raspberry-chipotle sauce from the oven and set aside for 10 minutes.
13. Top with fresh basil and sesame seeds and serve

• 1/4 cup (60 g) minced onion
• 2 tablespoons instant chicken bouillon granules
• 1/2 teaspoon onion powder
• 1/8 teaspoon lemon pepper
• 1 medium green bell pepper,cut into strips
• 1 tablespoon cornstarch
• 1 tablespoon water

Cooking Method:

1. Grease slow cooker with nonstick cooking spray.
2. Place chicken breasts in slow cooker.
3. In a medium mixing bowl,combine reserved pineapple juice,salad dressing,minced onion,bouillon granules,onion powder and lemon pepper.Mix well.

• 1/2 cup (125 g) frozen chopped onions,thawed and drained
• 10 3/4 oz (320 ml) can low-fat cream of celery soup
• 1/3 cup (80 ml) nonfat mayonnaise
• 2 tablespoons all-purpose flour
• 1 cup (250 g) chopped fresh celery
• 10 oz (300 g) package frozen broccoli florets,thawed and drained
• 1/2 teaspoon curry powder
• 1 tablespoon freshly squeezed lemon juice

• 2 tablespoons unsalted butter
• 1 large yellow onion,peeled and thinly sliced
• 1 tablespoon fresh chopped parsley
• 5 large potatoes,peeled and thinly sliced
• 2 cups (500 ml) hot chicken stock
• 1 tablespoon unsalted melted butter
• salt and freshly ground black pepper to taste

Cooking Method:

1. Preheat oven to 400 F (200 C).
2. In frying pan,heat 2 tablespoons butter.Add sliced onion and chopped parsley.Season with salt and black pepper.Cook,stirring,6-7 minutes over medium-low heat.
3. Add sliced potatoes,reserving 20 slices,season with more salt and pepper and mix well.
4. Cook for a further 2 minutes.
5. Arrange cooked potatoes in ovenproof casserole.Top with reserved potatoes.Pour in chicken stock to cover.Season generously with salt and black pepper.
6. Cook in preheated oven for 20 minutes.
7. Using a spatula,press potatoes down.Reduce heat to 350 F (180 C) and cook liquid is absorbed and potatoes are very soft.
8. 5 minutes before potatoes are cook,brush with melted butter.
9. Sprinkle with more parsley and serve immediately.

• 1 teaspoon chopped fresh parsley
• 4 tablespoons all-purpose flour
• 1 cup (250 ml) hot milk
• 2 large eggs,beaten
• 6 hard-boiled eggs,peeled and chopped
• 1 1/2 cups (370 g) breadcrumbs
• salt and freshly ground black pepper to taste

Cooking Method:

1. Preheat peanut oil in deep-fryer to 350 F (175 C).
2. Heat melted butter in small saucepan.Add chopped onion and parsley and cook,stirring,for 2 minutes.
3. Stir in all-purpose flour.
4. Pour in hot milk,mix well and season with salt and black pepper.
5. Continue cooking 6-7 minutes over low heat,stirring often.
6. Remove saucepan from the heat,set aside and allow to cool.
7. In a large mixing bowl,combine chopped eggs and cooled sauce.Mix well.
8. Form egg mixture into croquettes.
9. Dip each croquette into beaten egg and then dredge with breadcrumbs.

• 6 large yellow onions,peeled and thinly sliced
• 4 tablespoons olive oil
• 1 teaspoon granulated sugar
• 2 tablespoons unsalted butter
• kosher salt
• 2 cloves garlic,peeled and minced
• 8 cups (2 L) beef or chicken stock
• 1/2 cup (125 ml) dry vermouth
• 2 bay leaves
• 2 teaspoons dry thyme
• 1/2 teaspoon freshly ground black pepper
• 2 tablespoons brandy
• 8 inch-thick (20cm) slices of French bread or baguette.
• 1 1/2 cups (370 g) grated Swiss  Gruyere and Parmesan cheese

Cooking Method:

1. In a large saucepan,heat 3 tablespoons olive oil over medium heat.
2. Add sliced onions and toss well to coat with olive oil.
3. Cook onions,stirring,until softened(for about 15-20 minutes).
4. Increase heat to high.Add remaining olive oil and butter and cook,stirring, for a further 15 minutes or until onions become brown.
5. Sprinkle with sugar and 1 teaspoon kosher salt.Continue to cook until the onions are well browned, about 10 to 15 more minutes.
6. Stir in minced garlic and cook for a further 1 minute.
7. Stir in dry vermouth to the pot and scrape up the browned bits on the bottom and sides of the pot.
8. Stir in stock, bay leaves, and thyme.Reduce heat to low,cover saucepan and simmer for 30 minutes.
9. Season to taste with salt and black pepper,
10. Discard bay leaf.
11. Stir in brandy.
12. While the soup is simmering, line a sheet pan with aluminum foil.
13. Preheat the oven to 450°F(225 C)with a rack in the upper third of the oven.
14. Brush both sides of bread with olive oil.
15. Place in preheated oven and toast until lightly browned, about 5 to 7 minutes.
16. Remove toasted bread from oven.
17. Sprinkle toasted bread with grated cheeses and return to oven.Bake until the cheese is bubbly and lightly browned.

4. Using a slotted spoon,remove cooked shrimp,reserving cooking oil, and set aside.
5. In a reserved oil,cook onion until tender (about 5 minutes). Stir in yogurt mixture,bring to a boil.
6. Reduce heat to low and simmer 5 minutes or until mixture is lightly thickened,stirring.
7. Return shrimp to skillet.Cook until heated,about 3 minutes.

Ingredients:

• 1/3 cup (80 ml) vegetable oil
• 1/4 cup (60 g) minced onion
• 1/2 garlic clove,peeled and crushed

• 6 pork shoulder steaks,cut into 1/2 inch (1.2 cm) thick

Cooking Method:

1. Drain 6 pineapple slices,reserving 1/4 cup (60 ml) liquid from pineapples.
2. In a baking pan,combine reserved pineapple liquid,soy sauce,vegetable oil,onion,garlic and brown sugar.
3. Mix well.
4. Place pork steaks in marinade.Cover and refrigerate at least 3 hours,turning once.
5. About 40 minutes before serving,prepare you grill.
6. Remove marinated pork steaks from refrigerator and arrange on hot grill.
7. Grill for 15 minutes,brushing with marinade once.
8. Meanwhile,place pineapple slices in pan of marinade,turning to coat both sides.Place pan on grill while steaks are cooking to heat pineapple slices.
9. Flip steaks and grill for a further 15 minutes,spooning remaining marinade over steak once,until pork is thoroughly cooked and fork tender.
