Slow Cooker Lettuce-Wrapped Halibut

Slow cooker lettuce-wrapped halibut.Wrapped halibut fillets with dry white wine and herbs cooked in slow cooker.An attractive presentation for a yummy fish dish.
Makes 4 servings

slow cooker lettuce-wrapped halibut

Ingredients:
1 cup (250 ml) dry white wine
8-12 large lettuce leaves
4 halibut fillets
1 teaspoon bouquet garni
1/2 cup thinly sliced spinach
salt and freshly ground black pepper


Cooking Method:
  1. Pour dry white wine into slow cooker.
  2. Cover and cook on high-heat setting for 20 minutes.
  3. Cut large center vein from lettuce leaves,leaving leaves intact.Immerse in boiling water just until leaves are wilted (about 30 seconds). Drain well.
  4. Sprinkle halibut fillets with herbs.Season lightly with salt and black pepper.Sprinkle with sliced spinach.
  5. Wrap fish in lettuce leaves,then seam sides down in slow cooker.
  6. Cover slow cooker and cook on high-heat setting for 1 hour or until fish is tender and flakes with fork.
