Ingredients:
- 2 boneless and skinless chicken breasts,cubed
- 1/2 tablespoon cornstarch
- 1 large egg,scrambled and thinly sliced
- 2 tablespoons dark soy sauce
- 3 garlic cloves,peeled and minced
- 2 green chilies,seeded and sliced
- 2 onions,peeled and sliced
- 1 red pepper,seeded and thinly sliced
- 2 cups (500 ml) chicken stock
- 2 tablespoons chili sauce
- 1 teaspoon rice vinegar
- salt to taste
- 1/2 teaspoon crushed black pepper
- olive oil
- Heat olive oil in a wok.
- Season cubed chicken breasts with salt and black pepper.
- Add to a wok and brown in hot oil on all sides.Remove and set aside.
- Using the same wok,saute chopped onion, garlic, green chilies.
- Stir in chili sauce, chicken stock, vinegar, soy sauce and chicken.
- Bring chicken mixture to a boil.Boil until chicken is cooked.
- Stir in cornstarch to thicken.
- Stir in crumbled egg and serve immediately.
