Ingredients:
- 3 pounds (1.44 kg) boneless and skinless chicken breasts,cut into chunks
- 1 large head of broccoli,stems removed
- 1 red bell pepper,sliced
- 1 green bell pepper,sliced
- 1 medium yellow onion,peeled and sliced
- 1/4 cup (60 ml) coconut aminos
- coconut oil
- salt and freshly ground black pepper to taste
Cooking method:
- Heat coconut oil in a wok.
- Add onion and bell peppers.Season with salt , black pepper and coconut aminos.
- Cook,stirring,until soft.Remove from the wok and place in a bowl.
- Add broccoli to the same wok. Cook until soft.Remove cooked broccoli from the wok and place together with cooked onion and bell peppers.
- Add chicken chunks to the wok and cook,stirring,until cooked through.
- Add cooked chicken to the vegetables.Add coconut aminos,stir well and serve.
