Ingredients:
- 2 tablespoons melted butter
- 1 yellow onion,peeled and diced
- 2 cloves garlic,peeled and chopped
- red peppers flakes
- 1/4 cup (60 g) all-purpose flour
- 3 cups (750 ml) chicken broth
- 28 oz (840 g) can diced tomatoes
- 2 tablespoons tomato paste
- 8 oz (240 g) cheese tortellini
- 1/2 cup (125 g) freshly grated Parmesan cheese
- 10 oz (300 g) fresh spinach,chopped
- 1/2 cup (125 g_ heavy (double) cream
- 1/4 cup (60 g) fresh basil,chopped
- salt and freshly ground black pepper
Cooking method:
- In a pan,combine melted butter and onion.Cook over medium-high heat until tender,for about 5-7 minutes.
- Add chopped garlic and red pepper flakes.Cook,stirring,until fragrant,for a further 1 minute.
- Add all-purpose flour.Cook,stirring for another 1 minute.
- Stir in,diced tomatoes,tomato paste and tortellini.Bring to a boil,then reduce the heat to low and simmer until tortellini is tender,for about 10 minutes.
- Add grated Parmesan and allow to melt.Add fresh spinach and let it wilt.
- Stir in (double) cream and season with salt and black pepper.
- Remove from the heat,sprinkle with chopped basil and serve.
